Grilled Fruit Bruschetta with Honey Mascarpone

Put the sugar and lavender in a spice grinder and grind to a powder
- 1/4 cup sugar
- 1 teaspoon dried lavender buds
- 4 large apricots, halved and pitted
- 4 nectarines, halved and pitted
- 1/2 pound sweet cherries, pitted
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoons finely grated orange zest
- 1 tablespoon extra-virgin olive oil, plus more for brushing
- Salt and freshly ground pepper
- 1 cup mascarpone
- 2 tablespoons honey
- Eight 1-inch-thick slices of peasant bread
- 8 rosemary skewers, most of the leaves stripped off
Maple-Bacon Biscuit Bake

- Syrup
- 1/2 pound bacon, cooked until medium-brown
- 1/3 cup brown sugar
- 1/4 cup King Arthur Unbleached All-Purpose Flour
- 1/4 cup maple syrup
- 2 tablespoons melted butter
- Biscuits
- 2 cups King Arthur Unbleached All-Purpose Flour
- 2 teaspoons Bakewell Cream*
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup (4 tablespoons) cold butter
- 1 cup cold milk or cold buttermilk
- If you don't have Bakewell Cream, substitute 2 teaspoons baking powder and omit the baking soda.
Buttermilk Biscuits

Best Damn Lemon Cake

Move rack to bottom 1/3 of oven and heat oven to 350°F
- Batter
- 1 1/2 C sifted flour
- 1 tsp baking powder
- 3/4 tsp Salt
- 1/4 lb butter
- 1 C sugar
- 2 eggs
- 1/2 C milk
- 1 oz lemon extract
- 1/2 C ground almonds
- Zest From 2 Large Lemons
- Glaze
- 1/3 C Sugar, +2 tbls sugar
- 1/3 C fresh Lemon Juice
Danish Dough

In a small bowl, sprinkle yeast over the warm milk and stir until diss olved
- 1 cup warm milk (110 degrees F)
- 2 envelopes (1/4 oz each) active dry yeast
- 1 lb 4 ounces (about 4 1/2 cups) all-purpose flour, plus more for dusting
- 1/3 cup plus 1 Tbsp sugar
- 1 Tbsp coarse salt
- 1/2 tsp ground cardamom
- 1 lb (4 sticks) unsalted butter- room temperature, cut into tablespoons
- 2 large whole eggs, plus 1 large egg yolk

Maple Ice Cream with Bacon

Cook the maple syrup down to 1/2 its volume about 3/4 of a cup
- 1.5 cups of the best maple syrup you can afford
- 6 egg yolks
- 1/4 teaspoon salt
- 2.5 cups of cream
- 1.75 cups of milk
- At least six strips of caramelized bacon, cut into bacon bit sized pieces
Bacon and Cheese Pork Chops

When I pan sear my pork chops, I always like to tenderize them, especially if they are thick
- 2 Pork chops
- 4 strips of bacon (cooked and chopped into small pieces)
- 2 Tbsp. oil (or enough to lightly cover the bottom of the pan)
- shredded cheese (I used cheddar, but anything will do)
- Salt
- pepper
- garlic powder
- onion powder
Sour-Milk Waffles With Lemon Curd Syrup

Total Time: 60 minutes Makes: 6 waffles, 1¼ cups lemon curd
- For the lemon curd:
- Zest and juice of 6 large lemons
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 5 egg yolks
- Pinch salt
- For the waffles:
- 2 eggs, separated
- 2 tablespoons white vinegar
- 2 cups whole milk
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/2 teaspoon ginger (optional)
- 1/2 cup butter, melted
