Three-Cheese Mac and Cheese

Preheat the oven to 400° and butter a 10-inch cast-iron skillet
- 1 1/2 pounds penne
- 3 cups heavy cream or half-and-half
- 1/4 cup finely chopped sweet onion
- 2 garlic cloves, minced
- 1/4 cup all-purpose flour
- One 10-ounce log goat cheese
- 6 ounces sharp white cheddar cheese, shredded (1 1/2 cups)
- 1 packed cup freshly grated Parmigiano-Reggiano cheese
- 1/4 cup sour cream
- 1 tablespoon chopped parsley
- 2 teaspoons chopped thyme
- 1 1/2 teaspoons grated lemon zest
- Salt and freshly ground white pepper
- 3 large egg yolks
Chicken Tortilla Soup

Place chicken, 8 cups of water and 2 tsp of salt in a pot and simmer about 2 hours
- 1 3-4 lb chicken
- 8 cups water
- 2 tsp salt
- 1 14.5-ounce can chicken broth
- 1 can water
- 14 1/2 oz can diced/peeled tomatoes
- 1 cup salsa
- 2 tsp ground cumin
- 12-ounce can kernel corn (vacuum packed kind)
- 2 tsp paprika
- 1 tbsp lime juice
- 1 jalapeno pepper, seeded, chopped fine
- 1/4 cup chopped cilantro
- 1 1/2 cup cooked rice
- 1 zucchini squash, sliced thin and quartered
- 8 oz Monterey Jack cheese, shredded
- 1 avocado, peeled and sliced (optional)
- Fried tortilla strips or crumbled tortilla chips

Harvest Rice Dish

Place almonds on an ungreased baking sheet
- 1/2 cup slivered almonds
- 2 cups chicken broth
- 1/2 cup uncooked brown rice
- 1/2 cup uncooked wild rice
- 3 tablespoons butter
- 3 onions, sliced into 1/2 inch wedges
- 1 tablespoon brown sugar
- 1 cup dried cranberries
- 2/3 cup fresh sliced mushrooms
- 1/2 teaspoon orange zest
- salt and pepper to taste
Citrus Tarragon Butter

Beat butter in a small bowl until soft and light
- 1/2 cup unsalted butter
- 1 tbsp lemon juice
- 1 tbsp orange juice
- 1 tsp grated lemon peel
- 1 tsp grated orange peel
- 1 tbsp tarragon
- 1 tsp black pepper

KJ's Peach Cobbler

- 5 C sliced peaches
- 1/2 C sugar
- 2 tbsp flour
- 1 tbsp lemon extract
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 1/2 tsp cinnamon
- 2 tbsp butter
- Batter
- 1/2 C flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 tbsp butter, softened
- 1 egg, slightly beaten

- 1/2 cup all-purpose flour

- 1/2 teaspoon garlic salt
- 1/2 teaspoon cayenne pepper
- 4 large skinless, boneless chicken thighs, lightly pounded

- 1/2 cup unsweetened coconut milk
- 1 teaspoon freshly ground pepper
- Kosher salt
- 1 pound medium shrimp, shelled and deveined
- 2 tablespoons vegetable oil
- 6 thin slices of white sandwich breadcrusts removed, toasted and cut into 4 squares each
- 1/2 cup crème fraîche
