Cowboy Beans

Cook ground beef until browned, breaking up and stirring as it cooks
- Ingredients:
- 1 pound lean ground beef
- 1/2 cup chopped onion
- 1/4 cup ketchup
- 1/4 cup barbecue sauce
- 1/4 c. granulated sugar
- 1/4 c. brown sugar
- 2 tbsp. sorghum or other molasses
- 1 tbsp. chili powder
- 1 tsp. salt
- 1 tsp. pepper
- 2 tbsp. mustard
- 1 can (approx. 16 ounces) pork 'n beans
- 1 can (approx. 16 ounces) butter beans, drained
- 1 can (approx. 16 ounces) kidney beans, drained
- 1 can (approx. 16 ounces) pinto beans, drained
- 1/2 lb. bacon, cooked and crumbled
Banana-Date-Walnut Muffins

Instructions Preheat the oven to 400 and spray a muffin pan with non-stick spray
- 1 cup whole wheat flour (I used white whole wheat)
- 3/4 cup unbleached white flour
- 1 tablespoon baking powder
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1/2 cup natural sugar (I used the large crystal, unbleached kind)
- 3 very ripe bananas, mashed (about 1-1/4 cups)
- 1/2 cup vanilla soymilk
- 1/3 cup natural apple sauce
- 2 tbsp. agave nectar (optional)
- 1/4 cup chopped dates
- 1/4 cup chopped walnuts (omit to reduce fat)
Grilled Fajitas

Preheat your grill to about 400°
- 2 lbs. beef sirloin or boneless/skinless chicken breast, cut into strips or cubes
- 1 tsp. plus 1/4 tsp. GRANULATED GARLIC POWDER (divided)
- 1-3 TB. REGULAR CHILI POWDER
- 1 TB. Worcestershire sauce, if using beef
- 1 large onion, sliced into 2-inch strips
- 1 red bell pepper, sliced into 2-inch strips
- 1 orange or yellow bell pepper, sliced into 2-inch strips
- 1-3 jalapeño peppers, sliced
- 2 TB. olive oil
- 1/2-1 tsp. salt (to taste)
- 10-12 flour tortillas
Chicken pepperoni

if you use turkey pepperoni, use olive oil instead as this has little fat
- You'll Need:
- 2 boneless skinless chicken breasts
- 30 slices of pepperoni
- 8 slices of provolone
- 1/8 C flour
- 1/8 C parmesan cheese
- 1 1/2 T italian seasoning
- 1/2 t garlic powder
- 1/8 t onion powder

1. In a heavy-duty mixer, combine flour and salt
- 2 1/2 c. flour
- 1 c. very hot water
- 1 tsp. Kosher salt
- 1/4 c. shortening
baked penne primavera

- This baked vegetable and pasta dish is an easy favorite, thanks to its fresh-from-the-garden taste and creamy, fill-ya-up satisfaction.
- Serves: 6
- Cooking Time: 55 min
- Ingredients
- 1 pound penne pasta
- 1 (10-3/4-ounce) can condensed cream of asparagus soup
- 1 1/4 cups milk
- 1 (0.7-ounce) package dry Italian dressing mix
- 1 (15-ounce) container ricotta cheese
- 3/4 cup grated Parmesan cheese, divided
- 2 (16-ounce) packages frozen Italian mixed vegetables, thawed
- Instructions
- Preheat oven to 350 degrees F. Cook pasta according to package directions and drain; set aside. Coat a 9" x 13" baking dish with cooking spray.
- Meanwhile, in a large bowl, combine soup, milk, and dressing mix. Add ricotta cheese and 1/2 cup Parmesan cheese; mix well.
- Add cooked pasta and vegetables, and toss until well coated. Spoon into baking dish then sprinkle with remaining 1/4 cup Parmesan cheese.
- Bake 45 to 50 minutes, or until heated through.

- 3 ounces Melba toasts , white (about 2 cups)
- 1 teaspoon ground black pepper
- 3 large eggs
- 2 tablespoons Dijon mustard
- 1 tablespoon chopped fresh thyme leaves
- 1 tablespoon chopped fresh chives
- 12 ounces goat cheese , firm
- Extra-virgin olive oil
- Salad
- 2 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon minced shallot
- 1/4 teaspoon table salt
- 6 tablespoons extra-virgin olive oil
- Ground black pepper
- 14 cups mixed greens , washed and dried
- 12 ounces red seedless grapes , each grape halved
- 1/2 cup pine nuts , toasted in a small dry skillet over medium heat until fragrant and golden, about 7 minutes
- 12 slices prosciutto , very thin
Dry Brined Turkey With Classic Herb Butter

- 1 fresh or frozen turkey (1 to 1 1/2 pounds per person)
- Kosher salt
- 1 tablespoon sugar
- Freshly ground pepper
- 2 sticks unsalted butter, softened
- 2 tablespoons chopped fresh parsley
- 1 tablespoon dried sage
- 1 tablespoon dried thyme
- 1/4 teaspoon paprika
- 1/8 teaspoon ground cloves
bang bang shrimp and fried rice

Preheat oven to 350 degrees
- 1/2 cup mayo
- 4-5 tsp. chili garlic sauce
- 1 tsp. granulated sugar
- 1 tsp. rice vinegar
- 1/3 cup panko breadcrumbs
- 2 tbsp. whole-wheat flour
- 1/8 tsp. salt
- 1/8 tsp. garlic powder
- 1/8 tsp. onion powder
- 8 oz. raw large tail-on shrimp (about 12 shrimp), peeled and deveined
- 2 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
- 4 cups cooked white rice
- 2 bulbs garlic, finely chopped
- 2 cm piece fresh ginger, peeled and julienned
- 6 shallots or 1 onion, sliced finely
- 1 cup frozen mixed vegetables, boiled and drained
- 2 eggs
- 2 tablespoons light soy sauce
- 1/2 teaspoon pepper

Preheat oven to 400 degrees
- Scant (not full) 1/4 cup dried minced onion
- 2 pounds ground beef. It is recommended that you use 80/20. I used 85/15 and they didn't shrink up to completely fit the sheet of dinner rolls, but I was ok with that.
- 1/2 tsp seasoned salt. I used Lawry's, but how I longed for my long-lost Johnnies......
- 6 slices of your cheese of choice
- 12 count package of dinner rolls. I used the King's Hawaiian Dinner Rolls just like I did in these yummy nibbles
