- 1 serrano or jalapeno chile, halved lengthwise
- 2 celery stalks, halved
- 1 medium onion, quartered through stem end
- 2 garlic cloves, smashed
- 2 tablespoons seafood seasoning, plus more for serving
- 1 pound red new potatoes
- 2 ears corn, husks and silks removed, quartered
- 1 pound smoked andouille sausage, cut into 1-inch pieces
- 1 pound large shell-on shrimp
- 2 tablespoons melted butter
- 1 teaspoon hot-pepper sauce
- 12 oz of beer (optional)

- 1 1/2 tablespoons red wine vinegar
- 1 teaspoon grated orange rind
- 1/2 teaspoon minced fresh oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon crushed red pepper
- 1 large garlic clove, minced
- 1 (4-ounce) piece fresh pizza dough, halved
- 1 tablespoon olive oil

- 1 tablespoon fresh thyme, chopped or 1 teaspoon ground thyme
- 1/2 About 1/2 teaspoon dried oregano
- Salt and pepper
- 1 24-inch loaf crusty French bread, halved lengthwise and crosswise (or buy 2 smaller loaves to yield 4 individual foot-long sections)
- 2 cups Gruyère or Fontina Val d’aosta cheese (from a 10-ounce brick), shredded
- 1/2 cup grated Parmigiano Reggiano cheese

- 2 tablespoons olive oil, divided
- 4 garlic cloves, thinly sliced
- 6 cups fresh baby spinach
- 1 cup part-skim ricotta cheese
- 2 ounces shredded part-skim mozzarella cheese (about 1/2 cup)
- 2 ounces pecorino Romano cheese, grated (about 1/2 cup)
- 3 tablespoons 2% reduced-fat milk
- 1 garlic clove, minced
- 1 tablespoon cornmeal

- Ingredients•
- 4 4 1-inch slices good-quality white bread, sliced 1-inch thick
- Fig spread
- 2 2 2 tablespoons butter, plus a couple of small pats for frying the eggs
- 1 1 1 rounded tablespoon flour
- 1 1 1 cup whole milk
- Salt and pepper
- to grated nutmeg, to taste
- 1 1 1 tablespoon grainy mustard
- 8 8 8 slices prosciutto cotto with rosemary
- 1/2 1/2 1/2 pound Fontina Val D'Aosta cheese, grated
- 4 4 4 large organic eggs
- to 375°F. oven to 375°F.
- to 10-12 sauce among the bread slices. Top each slice with two folded prosciutto slices and a small mound of cheese, scattering the cheese all the way to the edges of the bread. Bake until golden, 10-12 minutes.
- to to the skillet and return it to the stove. When the sandwiches are done, cook the eggs to order in pats of melted butter.
- Top each sandwich with an egg and serve.

- 3 green onions, sliced

- 3/4 3/4 3/4 cup coconut milk
- 3 3 3 tablespoons soy sauce
- 3 3 3 tablespoons rice wine vinegar
- 1 1/2 1 1/2 1/2 tablespoons fish sauce
- 3/4 3/4 3/4 teaspoon red pepper flakes
- 1 1 1 tablespoon olive oil
- 1 1 1 medium onion, sliced
- 2 2 2 tablespoons fresh ginger root, minced
- 3 3 3 cloves garlic, minced
- 2 2 1/2 pounds skinless, boneless chicken breast halves - cut into 1/2 inch strips
- 3 3 3 shiitake mushrooms, sliced
- 5 5 5 green onions, chopped
- 1 1/2 1 1/2 1/2 cups chopped fresh basil leaves
- Directions
- to to 20 water to a boil in a pot. Cover, reduce heat to low, and simmer 20 minutes.
- In a bowl, mix the coconut milk, soy sauce, rice wine vinegar, fish sauce, and red pepper flakes.
