Texas Caviar

Yummy!!! This is now a family favorite
- 3/4 c cider vinegar
- 1 T water
- 1/4 c vegetable oil
- 1 c sugar (I often use much less-0.5 c then add to taste)
- 1 tsp salt
- 1 tsp pepper
- 1 (15 oz) can pinto beans
- 1 (15 oz) can black beans
- 1 (15 oz) can black-eyed peas
- 1 (15 oz) can garbanzo beans
- 2 (11 oz) cans white shoe peg corn
- 2 (4 oz) cans chopped green chilis
- 1 (4 oz) jar finely chopped pimento
- 1 c finely chopped green bell pepper
- 1 c finely chopped celery
- 1 small onion, finely chopped
- 1 or 2 bags of tortilla chips (Scoops work best)

- 1 2/3 cups whole-wheat pastry flour
- 1 cup all-purpose flour
- 2 tablespoons poppy seeds
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, slightly softened
- 1/2 cup canola oil
- 1 cup confectioners' sugar
- 1 large egg
- 1 teaspoon freshly grated lemon zest
- 1 teaspoon vanilla extract
- 1/3 cup cherry or other fruit preserves
Avgolemono, Orzo & Chicken Soup

This creamy soup is a delicious and healthy favorite of mine (without a drop of cream or dairy!)
- 6 cups fat-free, less-sodium chicken broth
- 1 teaspoon fresh dill, finely chopped (or 1/2 teaspoon dried)
- 1/2 cup uncooked orzo (rice-shaped pasta)
- 4 large eggs
- 1/3 cup fresh lemon juice (generous, 2-3 lemons)
- 1 cup carrot, shredded
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 8 ounces skinless, boneless chicken breast, cut into bite-sized pieces

- 2 cups all-purpose flour
- 2 tablespoons poppy seeds
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1 1/4 cups granulated sugar
- 3/4 cup reduced-fat sour cream
- 1/3 cup buttermilk
- 3 tablespoons canola oil
- 2 teaspoons freshly grated lemon zest
- 1 teaspoon vanilla extract
- 1 teaspoon almond flavor

- 2 medium onions, finely chopped
- 1 Turkish bay leaf or 1/2 California bay leaf
- 1 teaspoon dried oregano, crumbled
- 1 teaspoon dried hot red pepper flakes
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1 green bell pepper, cut into 1/4-inch dice
- 2 tablespoons tomato paste
- 1 1/2 cups dry red wine
- 1 (28- to 32-ounces) can whole plum tomatoes, drained, reserving juice, and chopped
- 1 cup bottled clam juice
- 1 cup chicken broth
- 1 (1-pound) king crab leg, thawed if frozen
- 18 small (2-inch) hard-shelled clams (1 1/2 pound) such as littlenecks, scrubbed
- 1 pound skinless red snapper or halibut fillets, cut into 1 1/2-inch pieces
- 1 pound large shrimp (16 to 20), shelled (tails and bottom segment of shells left intact) and deveined
- 3/4 pound sea scallops, tough muscle removed from side of each if necessary
- 1/4 cup finely chopped fresh flat-leaf parsley
- 3 tablespoons finely chopped fresh basil
- Garnish: shredded fresh basil leaves and small whole leaves
- Accompaniment: focaccia or sourdough bread

Directions 1. Let goat cheese (chevre) stand until at room temperature

- 60 whole dates, pitted
- 2 ounces cream cheese, softened
- 1 teaspoon fresh thyme, snipped
