Garlic Mashed Potatoes

- 1 cup water
- 3/4 cup canned chicken broth
- 1 large garlic clove
- 1/4 cup milk
- 1 tablespoon butter
Paella

This paella recipe is a delicious and accessible version of this famous Valencian dish
- 1 cup rice – use short, round-grain rice
- 4 tablespoons olive oil
- 2 chicken thighs
- 1 mini chorizo from Cost Plus World Market
- 4-8 defrosted shrimp/prawns
- 1 small ripe tomato – finely chopped or 1 can chopped tomato with chile or without.
- 1 small onion – peeled and finely chopped
- 1/4 cup frozen peas that are defrosting during cook time.
- 8 threads saffron
- 2 cups boiling water with chicken, seafood or veg bullion.
- 1/2 teaspoon paprika - smoked hot if you have it.
- Salt
- optional: jalapeno. I know, it's non-traditional yet yummy!
- Feel free to do different protein combinations - all chicken, bacon is good if no chorizo, mixed frozen seafood, tilapia.
- Use bullion to compliment your protein selection - feel free to use clam juice if making all seafood.

Heat olive oil in a skillet, add onion, garlic, chorizo and bay leaves
- 2 tablespoon extra virgin olive oil
- 1 red onion, sliced
- 2 garlic cloves, chopped
- 8 oz chorizo or other dense garlic flavored pork sausage, sliced (kielbasa works great, just add 1 teaspoon paprika withthe chickpeas)
- 2 bay leaves, bruised.
- 2 tablespoon pine nuts, toasted in a dry skillet
- 2 cups canned chickpeas drained - but save 2 tablespoons of their juice off.

- 1/2 stick plus 2 tablespoons butter
- 3 large sweet apple such as Gala or Golden Delicious, peeled, cored, and cut into 1/4-inch-wide wedges (Also works great with 3 pears!)
