Basic Flakey Pie Crust

Perfect pie crust - awesome! - double for deep dish pumpkin pie
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup shortening, chilled very cold
- 3 tablespoons ice water
Chickpea salad with lemon parsesan and fresh herbs

The beauty of this basic recipe is that it can be tweaked in numerous ways
- 1 15- to 15 1/2-ounce can chickpeas (garbanzo beans), rinsed, drained
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh Italian parsley
- 2 tablespoons fresh lemon juice
- 4 teaspoons extra-virgin olive oil
- 1 small garlic clove, pressed
- 1/3 cup (packed) freshly grated Parmesan cheese
- Coarse kosher salt
Grissini with Prosciutto

Appetizer - from Bon Appetit
- Butter, room temperature - very soft! Or use softened Boursin cheese
- 12 10- to 12-inch-long grissini or other long thin breadsticks
- 1/3 cup freshly grated Parmesan cheese
- 12 4x3-inch thin prosciutto slices
- 60 arugula leaves (about 2 large bunches)
- optional - grape or cherry tomatoes
- The presentation, standing up in a clear glass/jug with small cherry tomatoes, looked so impressive. And the grape tomatoes tasted really good along with the grissini. Just don't use too much pressure when rolling them, otherwise the grissini will break.
Armenian Rice Pilaf

Flavorful and adaptable - and everyone loves it!
- Required:
- 1/4 cup butter
- 1 1/2 cup uncooked rice
- 3 cups chicken, beef or veg broth (beef is my favorite!)
- Optional:
- sautéed mushrooms or canned
- sautéed onions and/or carrots and/or celery or dried soup vegetables.

What to do with all those limes!
- For the crust:
- 9 tablespoons unsalted butter (1 stick, plus one tablespoon)
- 1/4 cup (55g) superfine sugar (or regular granulated)
- 1 cup (150g) of unbleached all-purpose flour
- pinch salt
- For the filling:
- 1 1/2 cups (330g) superfine sugar (or regular granulated)
- 3 eggs
- 2/3 cup (150g) freshly squeezed lime juice (from 4-5 limes)
- 2 tablespoons lime zest (from 4-5 limes)
- 2/3 cup (100g) unbleached, all-purpose flour
- pinch of salt
- 1 tablespoon confectioner’s sugar
Chorizo in red wine

Cut the chorizo into 1/2 inch cubes
- 1.5 pound uncooked chorizo or other dense, garlic flavored pork sausage. Spicy works great. If you can't find chorizo, use kielbasa and add 2 teasoons of paprika to the juices in the pan.
- 2 tablespoon extra virgin olive oil
- 2/3 cup red wine
- 4 sprigs of thyme
- freshly ground black pepper
