Clam White Sauce for Linguine

Ingredients

  • 1/4 olive oil
  • 3 cloves garlic, chopped
  • 1/2 onion or one small onion, chopped small.
  • 1/4 teaspoon red pepper flakes
  • 1 Tablespoon flour
  • 1/2 cup white wine (the rest will be served with dinner!)
  • 1 teaspoon chopped parsley
  • 1/2 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1 can chopped clams with juice
  • 1/2 box of linguine
  • Shredded Parmesan cheese

Preparation

Step 1

Heat water for linguine.
When water nearly ready, begin sauce and add linguine to water.

Heat oil in fry pan
Add garlic and onion and red pepper flakes. Saute until happy and translucent but not browned.
Stir in slowly the flour.
Add wine, clams, oregano, pepper and 1/2 the parsley.
Stir frequently until sauce is nicely mixed and thickened.

Drain linguine and serve sauce over it. Sprinkle with parsley and parmesan cheese.

Serve with left over wine, sour dough bread and fresh salad.
