Basic Krumkake Recipe

Cannoli Filling Recipe with Mascarpone

* Mix filling ingredients together
- FILLING:
- 3/4 cup whole milk ricotta cheese (drained overnight w/ cheesecloth & squeezed dry)
- 3/4 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1/2 tsp vanilla or Grand Marnier
- 1/2 tsp ground cinnamon
- pinch of salt

Duluth Grill Rataouille

Mixed grilled veggies in home made tomatoe sauce Best if veggies are grilled on BBQ first then chopped
- Roasted Vegetables
- 2 large sweet onions
- 2 large bell (yellow, red or orange) peppers
- 2 large zucchini or yellow squash
- 1 large egg plant
- 1/2 cup olive oil (put on before grilling)
- 1 teaspoon sea salt
- 1/2 teaspoon pepper
- Sauce
- 3 large tomatoes peeled and cubed
- 2 garlic cloves crushed (or 1 teaspoons minced garlic
- 1 28 oz. crushed tomatoes
- 1/2 teaspoon sea salt
- 1 Tablespoon fresh oregano or 1 teaspoon dried
- 1 Tablespoon fresh basil or 1 teaspoon dried
- 20 basil leaves
- 1/2 cup chopped fresh parsley or 1/4 cu dried
- 1 1/2 teaspoon dried red pepper flakes
- 1 cup chopped kalamata olives
- 1/2 cup goat cheese crumbled
SCALLOPED POTATOES

1. Slice and layer potatoes in 13 X 9 glass baking dish 2
- 1 medium onion . minced
- 1 teaspoon vegetable oil
- 1/2 teaspoon table salt
- 1 teaspoon minced garlic
- 1/4 teaspoon ground black pepper
- 2 1/2 pounds russet potatoes (about 5 medium), peeled and sliced 1/8 inch thick
- 2 cups 2% milk
- 2 teaspoons cornstarch
- 1 tablespoon water
- 3 tablespoons light cream cheese
- 2 ounces grated Parmesan cheese (about 1 cup)

Italian Wedding Soup (with turkey meatballs)

1. Mix and make Turkey meatballs, set aside 2
- Broth:
- 1 lb boneless chicken tenders or breasts sliced thin
- 2- 32 oz chicken broth
- 1/2 teaspoon salt
- 1 medium onion sliced thin
- 2 cloves garlic
- 1/2 cup dried parsley
- 3 ribs celery - with the leaves
- 2 cups diced carrots
- 1 small head of escarole or bag of Spinach
- 1 cup Orzo pasta
- Turkey Meatballs:
- 1-2 lb. ground turkey
- 1 Tablesppoon onion flakes
- 2 eggs
- 2/3 cup panko bread crumbs
- 2 cloves garlic
- 1/4 cup grated Parmesan
- 1/2 tsp pepper
Chicken Fricasee & Cracker Dumplings

- 1/2 cup Butter
- 1/2 cup Shortening
- Paprika
- 1 cup White Sauce
- 1 egg
- DUMPLINGS
- 1/2 pound White Crackers
- 3/4 Cup Milk
- 1/2 Cup Flour
- 3 Eggs
Fried Cabbage and Dumplings

Cabbage: In large frying pan
- Cabbage:
- 1 large head cabbage, sliced and chopped into large pieces
- 1/2 Large Onion, sliced thin
- 2 Tablespoons Chicken or Pork grease (healthier version just use olive oil)
- 2 Tablespoons Butter
- Salt and Pepper to taste
- Dumplings:
- 2 cups cold mashed potatoes
- 2 eggs
- 2 Tablespoons Cream of Wheat (I keep individual servings around)
- 1/2 Teaspoon Salt
- 2 cups pre-sifted flour (if dough looks/feels sticky just add a bit more; or if it looks like its starting to firm up quickly add a bit less)
Cream of Aspargus Soup

1. Cut aspargus into 1 in pieces, put into pot and cover with water - cook until slightly tender
- 3 large bundles of Aspargus
- 6 C. Chicken Broth
- 1 Tbsp minced garlic
- 4 Tbsp parley flakes
- 1/2 C. Chopped Onion Flakes
- 1 C. finely chopped Celery
- 1 Tbsp. Thyme
- 8 Tbsp butter
- 4 tbsp Flour
- 1 Cup Half and Half

- 1 cup Sugar
- 1 1/2 cups Flour
- 2 teaspoons Baking Powder
- 1/4 teaspoon Salt
- 1/4 cup soft butter (melted)
- 2 eggs
- Milk
- 1/2 teaspoon vanilla
- FROSTING
- 2 Tablespoons melted butter
- 2 Tablespoons cream
- 4 Tablespoons Brown Sugar
Pecan Pie

Traditional recipe from Williamsburg Inn, Tidewater Virginia (Betty Crocker Cookbook)
- Pastry Crust:
- Beat together with rotary beater
- 3 eggs
- 2/3 cup sugar
- 1/3 tsp. salt
- 1/3 cup butter, melted
- 1 cup dark corn syrup
- Fold in
- 1 cup pecan halves
- 1 1/2 cups flour
- 3/4 cup Crisco
- pinch of salt
- Cold (ice water)small amount.
- Mix together. Roll out between two sheets of lightly floured wax paper (so dough does not stick) into a 9 inch pie pan.
