- 6 lb. chicken backs and necks
- 1 large or 2 medium yellow onions, quartered through the stem end
- 1 large carrot, peeled and cut into 1-inch lengths
- 1 large celery stalk with leaves, cut into 1-inch lengths
- 1 garlic clove, peeled
- 3 or 4 fresh flat-leaf parsley sprigs
- 1 bay leaf
- 8 to 10 whole peppercorns
- 1 large sweet onion, such as Vidalia or Walla Walla
- 1 lb. carrots
- 2 garlic cloves
- 2 -inch piece fresh ginger
- 1 orange
- 2 Tbs. unsalted butter
- 1 tsp. kosher salt
- 1 ⁄8 tsp. freshly ground pepper
- Several blades of fresh chives

Pumpkin Soup (with Lobster and Concord Grapes)

1. I n a large Dutch oven or saucepan, heat oil and butter over medium heat
- 3 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 medium sugar pumpkin, 3-5 lbs., peeled,
- seeded and cut into 1-inch chunks
- sea salt and pepper
- 1 cinnamon stick
- 5 whole cloves
- 1 star anise
- 1 onion, halved and thinly sliced
- 3 garlic cloves, smashed and peeled
- pinch sugar
- 2 quarts vegetable stock
- 1 lobster (about 1 1/4 pounds), cooked,
- removed from shell and cut into 16 pieces
- 1 cup cooked maitake or other wild mushrooms
- 1 cup fresh Concord grape juice
- 1/2 cup crustless brioche cubes (1/4 inch), toasted
Spaghetti with White Clam Sauce

- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano

- 1/4 teaspoon ground black pepper
- 2 (6.5 ounce) cans minced clams, with juice
- 1 pound spaghetti
- 2 tablespoons grated Romano cheese
Mustard Glazed Corned Beef

- 1/2 cup light corn syrup

Pumpkin Soup

Melt the butter in a saucepan
- 1/4 Cup butter
- 1 Cup chopped onion
- 1 clove garlic, crushed (1/4 tsp. MINCED GARLIC)
- 1 tsp. SWEET CURRY POWDER
- 1/2 tsp. salt
- 1/4 tsp. GROUND CORIANDER
- 1/8 tsp. CRUSHED RED PEPPER
- 3 Cups chicken broth
- 1 3/4 Cups freshly cooked pumpkin or 1 16 oz. can pumpkin
- 1 Cup half & half
- 1/2 Cup sour cream (optional)
- 2 TB. CHIVES (optional)
Rosemary Roasted Pork Loin

Heat oven to 450. Rinse the roast and pat dry
- 3 lb. boneless pork loin roast
- 4 cloves garlic, minced (or 1 tsp. PENZEYS MINCED GARLIC)
- 1 tsp. THYME
- 2 tsp. ROSEMARY
- 1 TB. fresh lemon juice
- 1 tsp. lemon zest (1/2 tsp. MINCED LEMON PEEL)
- 2 TB. olive oil, divided
- 1/4 tsp. salt
- 1/2 tsp. PENZEYS FRESHLY GROUND PEPPER
- 1-2 tsp. ARROWROOT or cornstarch for thickening gravy, if desired.
Amazing Simple Thai Tofu

Directions Heat olive oil and sesame oil in a skillet over medium-high heat
- 1 (14 ounce) package firm tofu, cut into 3/4 inch cubes
- 1/3 cup chopped green onion
- 1 1/2 teaspoons olive oil
- 1/2 teaspoon sesame oil
- 1 teaspoon soy sauce
- 2 teaspoons grated fresh ginger root
- 1/4 cup chunky peanut butter
- 3 tablespoons flaked coconut
- sesame seeds
Crockpot Ranch Pork chops:
