In small bowl, combine maple syrup, mustard, soy sauce, Worcestershire sauce and shallot
- 1 cup dark maple syrup
- 4 teaspoons Dijon-style mustard
- 2 teaspoon soy sauce
- 2 teaspoon Worcestershire sauce
- 2 teaspoon finely minced or rasped shallot
- 4 thick-cut (1&1/2" inch thick) pork chops, with fat layer intact
- Salt and pepper
- 6 tablespoons bacon fat or vegetable oil (divided)
- 2 tablespoon cold butter

- 2 cups flour
- 4 teaspoons baking powder
- 1/4 teaspoon baking soda

Pumpkin Chiffon Pie

To Toast Nuts: Preheat oven to 350 degrees F (177 degrees C)
- 1/2 cup (50 grams) pecans
- 1/2 cup (50 grams) walnuts
- 1/2 cup (80 grams) pitted dates
- 1/2 cup (90 grams) dried figs
- 1/2 cup (80 grams) dried cherries and/or cranberries

Greens with Spiced Butter and Fresh Ricotta

- 2 teaspoons whole black peppercorns, plus 1/4 teaspoon freshly ground
- 1/2 teaspoon cumin
- 4 whole cloves
- 3 dried bay leaves

- 8 ounces turkey breast, thinly sliced into 4 slices

- 1/2 cup breadcrumbs

- 8 slices turkey bacon
- 2 beefsteak or heirloom tomatoes, sliced
- 1 ripe avocado, pitted, peeled and thinly sliced

- 2 turkey wings, chopped into 1-inch pieces
