Hummus Pizza with Cucumber and Feta Salad

Place 2 baking sheets in oven and preheat to 500 degrees F
- 2 English cucumbers
- 4 tomatoes
- All-purpose flour, for dusting
- 4 (4-ounce) pizza dough rounds
- 16 ounces prepared hummus
- 1/4 lb. arugula
- 3/4 tablespoon dried oregano
- 1 teaspoon chopped garlic
- 1/2 teaspoon dried chili flakes
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- Sea salt, preferable gray salt and freshly ground black pepper
- 1/2 pound feta cheese
Breakfast Casserole

Butter a 4-quart baking dish
- Butter, for greasing pan
- 1 tablespoon olive oil
- 1 pound hot Italian sausage, casing removed
- 1 medium onion, finely chopped
- 1 medium red bell pepper, seeded and finely chopped
- One 1-pound loaf rustic French or Italian bread, cut into 1-inch-thick cubes
- 2 cups grated Gruyere cheese (8 ounces)
- 6 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1 1/2 tablespoons sliced fresh chives, plus more for garnish
- Kosher salt and freshly ground black pepper
Tea Madeleines

Directions 1. Preheat oven to 200°C (392°F)
- For the Madeleines
- 150 g unsalted butter, melted and cooled, plus extra to grease (I actually sprayed with cooking spray and added a sprinkling of flour as the recipe that came with the pan suggested this)
- 2 tbsp honey, added to the butter after melting
- 3 large eggs
- 150 g caster sugar (I used granulated as caster is hard to find here, and it was fine...or should I say superfine?!)
- 150 g plain flour, sifted
- 1/2 tsp baking powder
- Grated zest of 1 lemon
- For the Glaze
- 3 rounded tbsp icing sugar
- Juice of 1 lemon
Chicken Piccata

Place each chicken breast between 2 sheets of parchment paper or plastic wrap and pound out to 1/4-inch thick
- 2 split (1 whole) boneless, skinless chicken breasts
- Kosher salt and freshly ground black pepper
- 1/2 cup all-purpose flour
- 1 extra-large egg
- 1/2 tablespoon water
- 3/4 cup seasoned dry bread crumbs
- 2 cups all purpose flour, for dredging
- 6 tablespoons unsalted butter
- 5 tablespoons extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1/2 cup white wine
- 1/4 cup chicken stock
- 1/4 cup brined capers, rinsed
- 1/3 cup fresh parsley, chopped
- 4 servings of linguine (I used DeCio Pasta - Lemon Pepper http://www.deciopasta.com/) - optional
Butterscotch and Black Pepper Baby Carrots

In a medium skillet, heat the butter, sugar, and salt over medium-high heat, stirring until smooth
- 5 tablespoons butter
- 5 tablespoons packed light brown sugar
- 1/4 teaspoon kosher salt
- 1 pound baby carrots, halved lengthwise

Chicken with Rhubarb and Onions

- 2 tablespoons all-purpose flour
- 1 tablespoon Creole seasoning
- 1/4 teaspoon salt
- 4 boneless skinless chicken breasts, pounded to 1/4-inch thickness
- 3 tablespoons olive oil
- 1 pound rhubarb, cut into 1-inch pieces
