Chili Spicy

If using fresh beans soak them in cold water overnight
- 2 tablespoons butter
- 3 tablespoons bacon grease, or canola oil
- 2 red bell peppers, diced (about 2 cups)
- 2 jalapenos, minced (about 2 tablespoons)
- 2 Anaheim chiles, roasted, peeled, chopped
- 2 poblano chiles, roasted, peeled, chopped
- 2 yellow onions, diced (about 2 cups)
- 1 head garlic, minced (about 1/4 cup)
- 1 pound boneless chuck, trimmed and cut into 1/4-inch cubes
- 1 pounds ground beef, coarse grind
- 1/2 pound bulk Italian sausage
- 2 teaspoons granulated onion
- 2 teaspoons granulated garlic
- 3 tablespoons chili powder
- 2 teaspoons hot paprika
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons cayenne pepper
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper
- 2 cups tomato sauce
- 1 cup tomato paste
- 12 ounces lager beer
- 1 box beef broth
- 2 (15.5-ounce) cans pinto beans, with juice
- 2 (15.5-ounce) cans kidney beans, with juice
- 1 28 ounce can of tomatoes
- If more liquid needed add V8 juice or more beef broth
- Saltine crackers, for garnish
- 1 bunch green onions, thinly sliced
- 1 cup shredded Cheddar

One final note: My recipe here is for a baked version, since that’s what Victoria recalls
- For the pastry:
- 1/2 cup dry white wine
- 1/2 cup water
- 1/2 cup extra-virgin olive oil
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 2 tablespoons powdered sugar
- A pinch of salt
- For the top:
- 2 tablespoons powdered sugar mixed with a teaspoon of ground cinnamon
- For the filling:
- 10 pitted prunes
- 10 dried figs, the tough stems removed, the figs roughly chopped
- 1/2 cup dry Marsala
- 1/2 cup whole blanched almonds, lightly toasted
- 1/4 teaspoon ground cinnamon
- A pinch of ground clove
- 2 tablespoons sugar
- 1 tablespoon honey
- 1 heaping tablespoon orange marmalade
- The grated zest from 1 orange
- The grated zest from 1 lemon

Preheat the oven to 450 degrees F
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup buttermilk
- 1/2 cup milk
- 1 whole egg
- 1/2 teaspoon baking soda
- 1/4 cup shortening Crisco you can use the butter also
- 1/4 cup butter melted in skillet
- 1/4 cup sugar
- 1/2 teaspoon vanilla
Spiced Wine

Put everything in a heavy bottomed pan or my preference is a slo cooker
- 750ml bottle of inexpensive dry red wine (San Pedro)
- 1 bottle spiced wine (Jamestown Cellars Settlers' Spiced Wine)
- 2/3 cup of raw cane sugar or white sugar, Agave, brown sugar, molasses (yiur choice)
- Juice and peel of one small lemon
- Slice oranges, lemons, grapefruit
- 2 cardamon pods
- 4 cloves
- 2 Anise Stars
- 10 Allspice Berries
- 2 bay leaves
- 2 cinnamon sticks
- 1 piece of crystalized ginger
- add 1/2 cup of Cointreau Liquor or you may add your favorite liquor to individual servings
