- For the pastry:
- 2 1/4 cups all-purpose flour
- 3/4 tsp. salt
- 12 Tbs. (1 1/2 sticks) cold unsalted butter,
- cut into 1/2-inch cubes
- 1/2 cup ice water, plus more as needed
- (optional use puffed pastry from refrigerator section)
- For the filling:
- 14 Tbs. (1 3/4 sticks) unsalted butter, cut
- into 1/2-inch cubes
- 1 cup plus 2 Tbs. all-purpose flour
- 1/3 cup dry sherry
- 2 Tbs. chicken demi-glace
- 6 cups chicken stock
- 1 1/2 tsp. chopped fresh thyme
- 1 bay leaf
- 1 large yellow onion, chopped
- 3 celery stalks, sliced
- 2 carrots, peeled and cut into slices
- 1/8 inch thick
- 3 oz. white button mushrooms, cut into
- 1/4-inch dice
- 6 oz. small red-skinned potatoes, cut into
- 1/2-inch dice
- 3 cups cubed cooked chicken
- 1 cup fresh or frozen peas
- Salt and freshly ground pepper, to taste
- 1 egg, beaten with 1 tsp. water
Cherry-Filled Pancakes

In a small saucepan over medium-high heat, whisk together the orange juice and the 1/3 cup sugar
- 1 cup fresh orange juice
- 1/3 cup plus 1 1/2 Tbs. sugar
- 1 cup dried cherries, chopped
- 1 3/4 cups all-purpose flour
- 3/4 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- Zest of 1/2 lemon
- 3 egg yolks, lightly whisked
- 1 1/3 cups buttermilk
- 3/4 cup ricotta cheese
- 5 egg whites, beaten to stiff peaks
- 5 Tbs. unsalted butter, melted
Boiled Potatoes with Sausage and Arugula Sauce

In a large skillet, heat the olive oil over medium-high heat
- Gtavy:
- 3 tablespoons extra-virgin olive oil
- 1 small onion, diced
- Kosher salt and freshly ground pepper
- 2 cloves garlic, peeled and smashed or chopped
- 1/2 pound sweet or spicy Italian-style turkey sausage, casings removed
- 1/2 cup mascarpone cheese (4 ounces), at room temperature
- 1/2 cup grated Parmesan
- 2 tablespoons chopped fresh flat-leaf parsley
- Creamy white sauce:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup heated milk
- 1/3 cup heavy cream
- salt
- white pepper
- freshly ground nutmeg (optional)
- Few tablespoons dry white wine, a few teaspoons mixed fresh herbs, Parmesan cheese, etc.
- Parsley Potatoes:
- 6 red potatoes (about 2 pounds), peeled and halved
- 2 to 3 tablespoons unsalted butter
- Coarse salt and freshly ground pepper
- 1 tablespoon fresh dill, finely chopped
- 2 tablespoons torn fresh curly leaf parsley

- Pancakes:
- 2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 teaspoon salt, plus a pinch for egg whites
- 1 heaping teaspoon baking powder
- 4 eggs, separated
- 1 heaping cup ricotta cheese
- 3/4 cup milk
- 2 Meyer lemons, zested and juiced

Brown Sugar Brussels Sprouts

Steam Brussels sprouts over boiling water until tender, about 10 to 15 minutes
- 1 pound Brussels sprouts, halved
- 1 tablespoon TFM Extra Virgin Olive Oil
- 4 garlic cloves, crushed and chopped
- 1/2 lemon, juiced
- 1 teaspoon red pepper flakes
- 2 teaspoons salt (or more to taste)
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
Young Coconut Raw Cacao Smoothie
