Raspberry Mango Peach Smoothie

Place all in blender and blend until smooth
- Fresh Bananas, 2
- Fresh Apple, 1
- Frozen Blueberries, 1/3 cup
- Frozen Peach, 1/3 cup
- Frozen Mango, 1/3 cup
- Frozen Raspberries, 1/2 cup
- Passion-Fruit Juice, 1 cup
- Orange Juice, 3 cups
Blackberry Upside-Down Cake

Preheat oven to 350 degrees F
- Topping:
- 1/4 cup butter
- 1/2 cup firmly-packed brown sugar
- 1 1/2 teaspoon grated lemon zest (yellow rind)
- 1/4 chopped nuts (of your choice)
- 3 cups fresh blackberries
- Cake:
- 2 large eggs, separated
- 1 3/4 cups sifted cake flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated white sugar, divided
- 1 teaspoon pure vanilla extract
- 1/2 cup milk
- 1/8 teaspoon cream of tartar
- Filling:
- 1/4 cup Blackberry puree (sauce) or 1/4 cup of your favorite jam
Strawberry Shortcake (whole Cake)

Directions Preheat oven with a rack in the middle of the oven
- Whipped Cream Frosting:
- White Cake either box or scratch
- Marinated Strawberries
- 2 pounds Strawberries
- orange liquor pr sugar
- 1 teaspoon gelatin
- 2 cups heavy cream
- 1/2 cup confectioners' sugar
- 2 teaspoons vanilla extract
Rhubarb Parfait

In a medium saucepan, combine the rhubarb, strawberries, lemon zest, juice, and sugar
- 1 pound fresh or frozen rhubarb, cut into 1/2-inch pieces (see Note)
- 1 pound fresh or frozen strawberries, halved
- 1 lemon, zested
- 2 teaspoons lemon juice
- 1/2 cup sugar
- 1 1/2 tablespoons rosewater
- 1 tablespoon butter
- 1 tablespoon sugar
- Pinch ground cardamom
- 1/3 cup sliced almonds
- Kosher salt
- 4 cups Greek yogurt, for serving

- 1-quart1-quart milk (cream, whole, low fat, or skim) — In general the higher the milk fat level in the yogurt the creamier and smother it will taste. Note: If you use home-produced milk it must be pasteurized before preparing yogurt.
- Nonfat dry milk powder — Use 1/3-cup powder when using whole or low fat milk, or use 2/3-cup powder when using skim milk. The higher the milk solids the firmer the yogurt will be. For even more firmness add gelatin (directions below).
- (Optional) 2 to 4 tablespoons sugar or honey.
- (Optional) For a thick, firm yogurt swell 1 teaspoon unflavored gelatin in a little milk for 5 minutes. Add this to the milk and non-fat dry milk mixture before cooking.

- 1 1/4 lb calves liver (be sure to use calves or veal liver, not mature beef liver), thinly sliced
