Cream Biscuits

- 4 cups all-purpose flour
- 1 tablespoon plus 1 teaspoon Bakewell Cream (see Note)
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1/2 cup cold vegetable shortening
- 1 3/4 cups buttermilk
Beet Risotto

Roasted Beets pound small beets, (about 5), well-scrubbed Directions 1
- 7 cups chicken stock
- 1/2 cup dry white wine
- 4 tablespoons unsalted butter
- 1/4 cup extra-virgin olive oil
- 1 large sweet onion, finely chopped
- 2 large beets (12 ounces ), peeled and coarsely shredded, plus thinly sliced beets for garnish
- 1 small bunch beets roasted
- 3 cups arborio rice (1 1/4 pounds)
- 6 ounces young pecorino cheese, freshly grated (1 1/2 cups)
- 2 teaspoons poppy seeds, plus more for garnish
- 2 tablespoons butter
Pulled Pork Barbeque Slow Cooker

For the sauce: Heat the oil in a saucepan over medium-low heat
- BBQ Sauce:
- Ingredients
- 1 tablespoon canola oil
- 2 cloves garlic, minced
- 1/2 onion, diced
- 1 cup ketchup
- 1/3 cup molasses
- 1/3 cup brown sugar
- 4 tablespoons minced chipotle peppers in adobo sauce
- 4 tablespoons distilled vinegar
- 1 tablespoon Worcestershire sauce
- Dash salt
- I also like to use stubbs barbecue sauce for ease.
- Roast:
- 2 medium sweet onions, such as Vidalia, quartered
- 2 teaspoons light brown sugar
- 2 - 3 tablespoons of molasses
- 1 teaspoon smoked paprika
- 2 teaspoons salt
- Pinch black pepper
- One 4- to 6-pound Boston butt pork roast, bone-in
- Hawaiian Buns, for serving
Almond Cake

Preparation: - Cream 1 cup sugar, lemon rind, and egg yolks until the mixture is light and fluffy
- 1 cup sugar plus 1/4 teaspoon for topping
- 1/4 tsp grated lemon rind
- 1/2 lb Marcona almonds, finely ground
- 7 eggs, separated
- 1/4 tsp cinnamon
- 1/2 pint whipping cream
- 1 teaspoon brandy (optional)
- Chopped or ground toasted almonds for garnish
Peach Cake

Preheat the oven to 350 degrees F
- 1/4 pound (1 stick) unsalted butter, at room temperature
- 1 1/2 cups sugar, divided
- 2 extra-large eggs, at room temperature
- 1 cup sour cream, at room temperature
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon cloves
- 3 large, ripe peaches, peeled, pitted, and sliced
- 1/2 cup chopped pecans
- Peach Brandy
Cranberry Jam

In a medium pot, add the cranberries, sugar, water and the 1/2 cup of orange juice
- 1 pound fresh cranberries, washed and dried
- 2 cups granulated sugar
- 1/3 cup water
- 1/2 cup orange juice, plus 1 orange, zested and juiced
- 1 cinnamon stick
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
Brussels waffle

For the waffle batter: Put the flour in a large bowl
- 3 1/2 cups flour
- yeast (one package of fast-action yeast)
- 1/2 ounce of brown sugar
- 2 1/2 cups of lukewarm water (use tepid sparkling water if possible)
- 1/2 cup powdered nonfat dry milk (Carnation or similar)
- dash of salt
- 1/2 teaspoon vanilla extract or one small packet vanilla sugar (about 2 teaspooons)
- 2 1/4 sticks of melted butter
- 6 egg whites, beaten to stiff peaks
Amaretti Cookies Almond Macarons:

Amaretti Cookies: Preheat oven to 375 degrees F (190 degrees C) and line two baking sheets with parchment paper
- 8 ounces (225 grams) canned almond paste
- 1 cup (200 grams) superfine or castor white sugar
- 2 large (60 grams) egg whites
- Extra white sugar or Swedish pearl sugar for dusting cookies
Pork Meatballs

Add the meat to a large bowl, spread it out and season with salt, to taste
- 2 pounds ground pork (lean but not too lean), cut from the pork shoulder
- Kosher salt
- 1 teaspoons chili flakes
- 2 teaspoons fennel seeds
