Caramel Nut Tartlets

Preheat oven to 325°F. and spray tartlet pans with cooking spray
- For tartlet shells
- Vegetable-oil cooking spray
- 1 large egg yolk
- 2 teaspoons water
- 1 teaspoon vanilla
- 1 1/3 cups all-purpose flour
- 1/3 cup sugar
- 1/8 teaspoon salt
- 1 stick (1/2 cup) cold unsalted butter
- For filling
- 3 cups nuts (about 101/2 ounces; preferably a mixture of pecans, hazelnuts, and walnuts)
- 1 3/4 cups sugar
- 1/2 cup water
- 2 tablespoons light corn syrup
- 3/4 cup heavy cream
Garlic and Ginger Beef

Slice broccoli stalks from florets, cut florets into small chunks
- 1 small bunch broccoli
- 2 tsp. oil
- 1 lb. beef strips
- 1 yellow or red pepper
- ¼ cup soy sauce
- 5 garlic cloves, minced

- 1 tsp. sesame oil
Amaretti

- 8 oz. ground blanched almonds
- 1 ¾ cups icing sugar
- 2 egg whites
- 2 tsp. gelatine
- 3 tbs. water
- 2 tsp. sugar
Chocolate Fudge

Butter the sides of a heavy 2 quart saucepan
- 2 cups sugar
- 1/8 tsp. salt
- 3/4 cup evaporated milk
- 1 tsp. light corn syrup
- 2 square (1oz) unsweetened chocolate
- 2 tbs. butter or margarine
- 1 tsp. vanilla
- 2 cups chopped walnuts or pecan
Pastry Cream 4

Slowly heat milk, 2 tbs. of the sugar, and zest on top of a double broiler
- 3 ¼ cups milk
- ½ cup and 2 tsp. sugar
- 3 strips lemon zest
- 7 egg yolks
- 1 egg
- Salt
- ½ cup flour
- 1 – 2 tbs. vanilla
- 3 tbs. butter
Cannoli Filling

Drain the ricotta cheese overnight in the refrigerator to remove excess water
- 32 oz. Ricotta cheese
- 10 ounces sugar
- 16 ounces cream cheese, cold
- 1 tsp. vanilla
- ¼ tsp. cinnamon
- Mini chocolate chips
- Minced candied fruit
Ravioli with Spinach and Ricotta

Wash the spinach and remove the stems
- 1 lb. 2 oz. flour
- 2 eggs
- Pinch salt
- 150 ml milk, warmed
- 750 grams spinach, weighed without stems
- 300 grams ricotta
- 1 tbs. butter
- 1/2 ½ onion, chopped
- 2 tbs. grated Parmesan
- Salt and pepper
- 1/2 ½ tsp. nutmeg
- 1 egg yolk
- Salt
- 3 oz butter, melted
- Grated Parmesan cheese
Tiramisu

- Ingredients: Hot Milk Sponge
- MILK, 1/4 cup
- BUTTER, 2 teaspoons butter
- FLOUR, 1-1/4 cups
- BAKING POWDER, 1 teaspoon
- EGGS, 3
- SUGAR, 1-1/4 cups
- EGG YOLKS, 3
- Ingredients: Mascarpone Cream
- ESPRESSO COFFEE, 1/2 cup + 2 tablespoons
- HOT WATER, 1/2 cup + 2 tablespoons
- GRAND MARNIER, 3 tablespoons
- MASCARPONE, 1 cup
- RUM, 2 tablespoons (Substituted Marsala wine on "Emeril Live")
- EGGS, 3 separated
- SUGAR, 6 tablespoons (Substituted 3 tablespoons on "Emeril Live")
- HEAVY CREAM, 1 cup (Substituted 3 cups on "Emeril Live")
- VANILLA, 1/4 teaspoon vanilla
- SALT, a pinch
- COCOA POWDER, enough to sprinkle
- POWDERED SUGAR, enough to garnish
Chicken Kiev

Cut the butter into 6 pieces, shape each into a roll about ½ inch thick
- 6 tbs. butter
- 1 ½ tbs. minced fresh parsley
- 1 ½ tbs. minced fresh chives
- 1 tsp. dried tarragon
- ½ tsp. dried oregano
- ½ tsp. dried thyme
- Vegetable oil
- 3 whole chicken breasts, de-boned, skinned and split
- ¼ cup flour
- 1 egg, beaten
- ½ cup dry bread crumbs
Strawberry Shorbet
