Dairy Free Sweet Potato Casserole

A sweet potato casserole recipe, made with mashed sweet potatoes and a crunchy pean topping
- Potatoes:
- 3 cups mashed sweet potatoes
- 1 cup brown sugar
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1/2 cup almond milk (alternatively use rice or soy milk)
- 1/2 cup melted organic smart balance or earth balance
- Topping:
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/3 cup melted organic Smart Balance or Earth Balance
- 1 cup chopped pecans
Chicken Cutlets in Tarragon Bread Crumbs

Flatten the chicken and even thickness of about 1/8 inch
- 4 boneless, skinless chicken breast (about 1 1/2 pounds)
- 2 eggs
- 1 cup dry bread crumbs
- 2 teaspoons dried tarragon
- 3/4 teaspoon salt
- 1/4 teaspoon fresh-ground black pepper
- 5 tablespoons olive oil
- 1 lime, cut into wedges
Lentil Soup

In a large saucepan over medium-high heat, warm the oil
- 2 tablespoons olive oil
- 1 yellow onion, finely chopped
- 1 celery stalk, thinly sliced
- 1 carrot, peeled and thinly sliced
- 1 clove garlic, minced
- 1 bay leaf
- 2 teaspoons curry powder
- 1 cup (6 oz) canned diced plum tomatoes
- 1 1/2 cups (10 1/2 oz) dried brown or pink lentils picked over, rinsed, and drained
- 6 cups chicken, beef, or vegetable stock
- 1 lemon, sliced
- 1 cup (2 oz) coursely chopped fresh spinach
- Salt and freshly ground pepper to taste
Oat Bran Bread

- 1 1/4 cups warm water
- 2 tablespoons avocado oil, olive oil, or butter substitute
- 2 1/2 cups bread flour
- 1/4 cup oat bran
- 2 tablespoons honey
- 1 teaspoon salt

- 1/2 cup light brown sugar, packed
