Longboy Cheeseburgers

Be sure to spread the meat to the edges of the rolls, or the bread will burn
- 2 (6-inch) sub rolls, split in half lengthwise
- 1 1/4 cups cornflakes, crushed
- 1/2 small onion, minced
- 1/3 cup whole or low-fat milk
- 6 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon minced fresh thyme
- 1/2 teaspoon garlic powder
- 1 large egg, lightly beaten
- Salt and pepper
- 1 1/2 pounds 90-percent lean ground beef
- 2 cups shredded cheddar cheese

- 1 1/2 1 1/2 1/2 cups (7 1/2 ounces) yellow cornmeal

- 1 1/2 cups basmati rice or long-grain white rice
- 3 shallots, sliced thin
- 1/2 cup olive oil
- 2 ounces vermicelli, broken into 1-inch pieces

- 4 thick slices of bacon (4 ounces), cut crosswise 1/2 inch thick
- 1 pound Yukon gold potatoes, peeled and cut into 1/2-inch dice
- 2 red bell peppers, cut into 1/2-inch dice
- 8 ears of corn, kernels removed
- 1 medium red onion, thinly sliced
- 1/4 cup cider vinegar
- 1/4 teaspoon crushed red pepper

Roasted Onion Salad with Arugula and Walnut Salsa

Preheat the oven to 425° F
- For the salad:
- 4 medium red onions
- 1 1/2 tablespoons olive oil
- 1 cup arugula (Not to be a snob, but if you can find arugula at your farmers market, I promise that it will be ten times better than the boxed stuff. Prettier, too.)
- 1/2 cup flat-leaf parsley leaves
- 2 ounces soft goat cheese, broken into 1/2- to 1-inch chunks
- Flaky salt and freshly cracked black pepper
- For the walnut salsa:
- 2/3 cup walnuts, coarsely chopped (make sure they're not bitter or rancid, okay?)
- 1 fresh red chile (e.g. Thai bird's eye), seeded and finely chopped
- 1 clove garlic, minced
- 3 tablespoons red wine vinegar
- 1 tablespoon olive oil

Roasted Ham with Sherry Apricot Glaze

Bring ham to room temperature, about 2 hours
- For the Glaze:
- 1/2 cup dry sherry
- 1/2 cup honey
- 1/2 cup apricot preserves
- 1/4 tsp smoked paprika
- 1/4 tsp ground allspice
- Minced zest and juice of 2 oranges
- For the Ham:
- 3 cups fresh orange juice
- 1 Tbsp allspice berries
- 1 Bone-in spiral-sliced smoked ham (6-8 lbs)
Impossibly Easy Bacon Pie

In a large saucepan, combine milk, yogurt, salt and sugar, bring mixture to a boil over medium heat

- 4 cups of whole milk
- 1 tablespoon of plain yogurt
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 1 tablespoon fresh lemon juice
- 2 liters fresh whole milk
- 2 to 3 tablespoons fresh lemon or lime juice
Easy Alfredo Sauce

In a medium saucepan combine whipping cream, butter or margarine, and grated Parmesan cheese
- 1 pint heavy whipping cream
- 1/2 cup butter
- 1 1/2 cups grated Parmesan cheese
Cider Glazed Pork Chops

Combine all glaze ingredients in medium bowl; mix thoroughly and set aside
- Glaze
- 1/2 cup distilled white vinegar or cider vinegar
- 1/3 cup light brown sugar
- 1/3 cup apple cider or apple juice
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce
- Pinch cayenne pepper

- 4 boneless, center-cut pork loin chops , 5 to 7 ounces each, 1/2 to 3/4 inch thick
