Chipotle Chicken Tacos

Preheat the oven to 350°
- 8 chicken thighs (3 pounds)
- 2 tablespoons vegetable oil, plus more for brushing
- Salt
- Pepper
- 1/2 medium white onion, minced, plus more for serving
- 2 jalapeños—stemmed, seeded and minced
- 2 tablespoons minced chipotle chiles plus 3 tablespoons adobo sauce from the can or jar
- 4 plum tomatoes, finely chopped
- Warm corn tortillas, cilantro leaves, sour cream and lime wedges, for serving
Skillet Breakfast Casserole

Preheat oven to 350 degrees
- 1 package Pioneer brand Sausage Gravy
- 4 cups tater tots
- 1 tablespoon vegetable oil
- ½ cup sausage, cooked, drained and crumbled
- 1 ½ cups water
- 2 large eggs
- 1 ½ cups cheddar cheese
Sweet Potato Soup with Bacon and Chives

Cook bacon in Dutch oven over medium heat until crisp, 6-8 minutes
- 6 slices bacon, chopped
- 1 onion, chopped fine
- 1 tsp packed brown sugar
- Salt and pepper
- 3 garlic cloves, minced
- 2 lbs sweet potatoes, peeled, quartered lengthwise, and sliced thin
- 4 cups low sodium chicken broth
- 1 cup water
- 2 Tbsp minced fresh chives
Chocolate Mousse with Puff Pastry Hearts

Combine the chocolate and butter in a heatproof bowl set over a saucepan of barely simmering water
- 3 ounces semisweet chocolate, chopped
- 6 tablespoons unsalted butter, cut into pieces
- 2 large eggs, separated, plus 1 beaten egg for brushing
- 6 tablespoons plus 1 teaspoon sugar
- 2 tablespoons cognac or brandy
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 1 sheet frozen puff pastry (half of a 17-ounce box), thawed
- Whipped cream, for topping
Steak and Eggs Benedict with Red Wine Hollandaise

In a small saucepan, combine the Cabernet and port and bring to a boil
- 1/4 cup Cabernet Sauvignon
- 1/4 cup ruby port
- 2 large egg yolks
