Thai Sweet Chili Sauce

Makes about 1 cup I keep the chili seeds in, but your mileage may vary, so adjust the heat accordingly
- 3 large garlic cloves, peeled
- 2 red Jalapeño or Serrano peppers, deseeded (See note #1 below.)
- 1/4 cup white distilled vinegar
- 1/2 cup sugar
- 3/4 cup water
- 1/2 tablespoon salt
- 1 tablespoon cornstarch or potato starch (See note #2 below.)
- 2 tablespoons water
Sistema Red Skinned Mashed Potatoes

- 3 medium red skin potatoes cut into 1/2 inch pieces
- Water to cover
- 2 tbs butter
- 1/2 cup chicken both

Goat Cheese Stuffed Fingerlings

Wash the potatoes well
- Ingredients:
- (Yields: 20-24 pieces)
- 10-12 fingerling potatoes (2 1/2" to 3" long, thicker ones preferred)
- 5 ounces goat cheese, room temperature
- 2 teaspoon white truffle oil
- (or hazelnut or walnut oil)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Dijon mustard
- 2 teaspoons sherry vinegar
- 2 tablespoons extra virgin olive oil
- Optional for garnish:pink peppercorns
- chives, cut into 1" section

Preheat the oven to 350° and place a rack in the center
- 4 tablespoons unsalted butter, 1 tablespoon of it softened
