Salisbury Meatloaf and Potatoes

If Meatloaf Mix is unavailable, you can substitute 12 ounces ground chuck and 8 ounces ground pork
- 1 1/2 pounds Yukon gold or red potatoes, cut into 1-inch chunks

- 1 1/4 pounds meatloaf mix
- 1/2 cup panko breadcrumbs
- 1 large egg
- 1/2 onion, grated
- 1 1/2 teaspoons chopped fresh thyme
- 2 teaspoons Worcestershire sauce
- Freshly ground pepper
- 4 tablespoons unsalted butter
- 1 1/2 cups baby carrots, halved lengthwise
- 3 stalks celery, sliced
- 1 1/4 cups low-sodium chicken broth
- 3 tablespoons half-and-half

Quick Coffee Cake

Preheat oven to 350. Melt butter
- For Glaze:
- 1 heaping tablespoon of butter
- 1/2 cup plus 3 Tbsp sugar, divided
- 1 egg
- 1/2 cup milk
- 1 1/2 tsp vanilla extract
- 1 1/2 cups AP flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1 cup confectioners' sugar
- Start with 3 Tbsp water, add more to achieve glaze consistency

- Topping:
- 3/4 cup flour
- 2/3 cup light brown sugar
- 1 tsp cinnamon
- pinch of salt
- 5 Tbsp unsalted butter
- Plus 1 or 2 of the following:
- 1/2 cup finely chopped nuts
- 1/2 cup lightly crushed corn flakes
- 3 Tbsp finely chopped chocolate
- 1 tsp finely grated orange or lemon zest
- 1/2 cup rolled oats
- 2 Tbsp unsweetened cocoa powder
- Batter:
- 2 cups AP flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 stick room temperature butter
- 1 cup granulated sugar
- 2 eggs
- 2 tsp vanilla
- 1 cup sour cream
- Filling (choose 1):
- 2/3 cup any flavor jam
- 2/3 cup chocolate hazelnut spread
- 2/3 cup dulce de leche
- 2/3 cup apple butter
- 1 cup chocolate chips
- 1 1/2 cups fresh berries (or 1 cup thawed frozen berries)
Hash Brown Crusted Quiche

- 3 cups, shredded frozen hash browns, thawed and drained
- 4 tablespoons (1/2 stick) butter, melted
