Ingredients

  • Topping:
  • 3/4 cup flour
  • 2/3 cup light brown sugar
  • 1 tsp cinnamon
  • pinch of salt
  • 5 Tbsp unsalted butter
  • Plus 1 or 2 of the following:
  • 1/2 cup finely chopped nuts
  • 1/2 cup lightly crushed corn flakes
  • 3 Tbsp finely chopped chocolate
  • 1 tsp finely grated orange or lemon zest
  • 1/2 cup rolled oats
  • 2 Tbsp unsweetened cocoa powder
  • Batter:
  • 2 cups AP flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 stick room temperature butter
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup sour cream
  • Filling (choose 1):
  • 2/3 cup any flavor jam
  • 2/3 cup chocolate hazelnut spread
  • 2/3 cup dulce de leche
  • 2/3 cup apple butter
  • 1 cup chocolate chips
  • 1 1/2 cups fresh berries (or 1 cup thawed frozen berries)

Preparation

Step 1

Topping: Mix together flour, light brown sugar, cinnamon, and salt in a small bowl. Add butter and 1 or 2 of the other add ins. Rub mixture between fingers until incorporated. Set aside.

For the Batter: Preheat oven to 350 and line an 8 inch square dish with foil, leaving an overhang; butter the foil. Whisk the flour, baking powder, baking soda and salt in a large bowl. In a separate large bowl, beat butter and sugar with a mixer on medium speed until light and fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla. Reduce the mixer speed to low and add the flour in 3 batches, alternating with the sour cream, beginning and ending with the flour mixture. The batter will be thick.

Spread half of the batter in the prepared baking dish. Spread or sprinkle the chosen filling on top in an even layer. Spoon the remaining batter over the filling and spread evenly. Sprinkle with the prepared topping. Bake until topping is golden brown and a toothpick inserted in the middle of the cake comes out clean, 55 minutes to 1 hour 5 minutes. Let cool 20 minutes in the baking dish, then lift the cake out using the foil and transfer to a rack to cool completely. Dust with confectioners' sugar if desired.
