Simple Christmas Cookies

Process butter in a food processor until smooth
- 1 cup (2 sticks) unsalted butter, cut into pieces, chilled
- 1/2 cup granulated sugar
- 1/4 cup (packed) light brown sugar
- 2 large egg yolks
- 2 teaspoons vanilla extract
- 1 teaspoon kosher salt
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 1/2 teaspoon ground cardamom, cloves, or nutmeg
- 1/4 teaspoon baking powder
- 2 cups plus 2 tablespoons all-purpose flour, plus more for surface
- Colored sanding sugars or royal icing (optional; for decorating)
- Assorted cookie cutters
Greek Yogurt Chocolate Mousse

Place the chocolate into a medium heatproof bowl
- 6 ounces (170g) good-quality dark chocolate with 70% cacao, finely chopped
- 1/2 cup (120ml) whole milk
- 1 or 2 tablespoons Grand Marnier, or other good-quality orange liquor
- 1 cup (240ml) whole Greek yogurt (2% is also okay, but don’t use nonfat)
- 4 teaspoons orange marmalade
Boursin-Parsley Pan Sauce

Use low-sodium broth and unsalted butter in this recipe or the reduced sauce may be too salty
- Makes enough for 4 steaks
- 1 tablespoon unsalted butter, chilled
- 1 shallot, minced
- 1/2 cup red wine
- 1 teaspoon brown sugar
- 1/2 cup low-sodium beef broth
- 1 teaspoon minced fresh parsley leaves
- 3 tablespoons oursin cheese (either herb or cracked black pepper variety)

Ham Loaf

- Glaze:
- 3/4 cup packed brown sugar
- 1/4 cup cider vinegar
- 1/4 cup ketchup
- 1/4 cup water
- 2 tablespoons spicy brown mustard
- 1/8 teaspoon cayenne pepper
- Ham Loaf:
- 2 tablespoons vegetable oil
- 1 onion, chopped fine
- 36 Saltine crackers
- 2 pounds boneless ham steak, rind removed, cut into 1-inch pieces
- 1 pound ground pork
- 1 cup whole milk
- 3 large eggs
- 1 tablespoon spicy brown mustard
- 1 teaspoon pepper
- 1/4 teaspoon cayenne pepper
Potato, Salami, and Cheese Frittata

In a 12-inch nonstick ovenproof frying pan or cast-iron pan, heat 1 tablespoon of the oil over moderate heat
- 2 tablespoons cooking oil
- 1 1/2-pound baking potato, peeled and cut into 1/2-inch cubes
- 1/4 teaspoon salt
- 8 large eggs
- 1/8 teaspoon fresh-ground black pepper
- 1/4 cup grated Parmesan
- 3 ounces sliced hard salami, slices halved and then cut crosswise into thin strips
- 1 tablespoon butter
- 1/4 pound mild goat cheese such as Montrachet, crumbled
Leek, Turnip and Rice Soup

Heat the oil over medium heat in a large, heavy soup pot or Dutch oven and add the leeks
- 2 tablespoons extra virgin olive oil
- 4 large leeks, white and light green parts only, cleaned and sliced
- 1 pound turnips, cut in 1/2-inch dice
- 2 garlic cloves, minced
- 2 quarts vegetable stock, chicken stock or water
- Salt to taste
- 1 bay leaf
- ½ cup rice, preferably arborio
- Freshly ground pepper
- 2 tablespoons chopped fresh parsley
- Freshly grated Parmesan for serving (optional)
- Garlic croutons for serving (optional)
Sole Piccata

Pat fillets dry with paper towels and season with salt and pepper; dredge in flour
