Candied Sweet Potatoes

- 3 pounds sweet potatoes, peeled, ends trimmed, and sliced 3/4 inch thick
- 2 tablespoons vegetable oil

- 1/2 cup maple syrup
- 1/2 cup water
- 4 tablespoons unsalted butter
- 1 teaspoon cornstarch
