This recipe is a great way to use leftover mashed potatoes
- 3 slices bacon, cooked and chopped
- 3 cups cold leftover mashed potatoes
- 2 eggs
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt, adjust to your taste
- 1/2 teaspoon pepper
- 1 and 1/2 cup shredded cheddar cheese
- 1 cup panko breadcrumb
