- 4 4 4 large eggs
- 1-1/2 1-1/2 1-1/2 cups canola oil
- 1 1 1 teaspoon each coconut, rum and vanilla extracts
- 3 3 3 cups shredded zucchini
- 1 1 1 cup canned crushed pineapple, drained
- 1/2 1/2 1/2 cup chopped walnuts or chopped pecans

- 1 lb lean ground beef
- 2 Tbsp olive oil, divided
- Salt and freshly ground black pepper
- 1 small yellow onion chopped (1 cup)
- 3/4 cup chopped red bell pepper (a little over 1/2 of a medium)
- 3/4 cup chopped green bell pepper
- 2 cloves garlic, minced
- 2 (14.5 oz) cans petite diced tomatoes
- 1 (15 oz) can tomato sauce
- 1 (14.5) can beef broth
- 2 1/2 Tbsp chopped fresh parsley, plus more for garnish
- 1/2 tsp dried basil
- 1/4 tsp dried oregano
- 1 cup uncooked white rice
- Mozzarella cheese, for serving (optional)

- 1/2 1/2 1/2 cup sugar
- 1/2 1/2 1/2 cup all purpose flour
- 3 3 3 tbsp cocoa powder
- Chocolate Buttercream
- 2 2 2 sticks butter, room temperature
- 1/2 1/2 1/2 cup vegetable shortening (can be replaced with butter)

- 2/3 2/3 2/3 cup cocoa powder
- 2 2 2 cups powdered sugar

- 6 tbsp buttermilk (I didn’t have any buttermilk on hand so I used 5 1/2 tbsp. of milk and 1/2 tsp. vinegar and let sit for 5 minutes)

- 1/2 cup icing sugar
