- 1 medium or 2 small zucchini, grated (about 2 cups)
- 1 cup shredded sharp cheddar cheese
- 1/2 teaspoon garlic powder
- 1 teaspoon salt + pepper to taste
- 1-2 tablespoons milk

- FROSTING:
- 2 C butter, softened
- 2 C sugar
- 2 t baking soda
- 2 t baking powder
- 1 t salt
- 1 t cinnamon
- 1 t nutmeg
- 2 eggs
- 2 t vanilla
- 1 (15 ounce) can pumpkin
- 4 C flour
- 1/2 C butter
- 1/2 C brown sugar
- 1/4 C milk
- 1 t vanilla
- 5 C powdered sugar
- 1 T maple syrup (optional, but fabulous)
- dash salt

Carrot cake is one of those desserts that I don’t make very often
- Cupcakes:
- 1 1/4 cups flour
- 1/2 tsp + 1/8 tsp baking soda
- 1/2 tsp + 1/8 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 cup sugar
- 2 eggs
- 1/2 cup canola oil
- 1/4 cup sour cream (light is fine)
- 1/2 tsp vanilla
- 1 1/2 cups finely grated carrots
- Frosting:
- 8 oz cream cheese, softened
- 1/2 cup butter, softened
- 2/3 cup brown sugar
- 2 tsp vanilla
- dash of salt
- 3 cups powdered sugar (more or less)

- 1 pound ground beef (or Italian sausage), browned and drained
- 1 small onion, chopped
- 1 cup matchstick carrots (or 1 cup finely diced carrots)
- 28 ounce can crushed tomatoes
- 15 ounce can tomato sauce
- 15 ounce can kidney beans, drained
- 15 ounce can navy or Cannelloni or navy beans, drained
- 15 ounce can beef stock
- 2 tablespoons italian seasoning
- 1 tablespoon dried parsley
- 1 cup water
- 1 cup dried pasta, I'm using little rings.
