Korean Beef

Heat a large skillet over medium heat and brown hamburger with garlic in the sesame oil
- 1 pound lean ground beef
- 1/4 - 1/2 cup brown sugar (I like it sweet so I usually do closer to 1/2 cup)
- 1/4 cup soy sauce (I use low-sodium)
- 1 Tablespoon sesame oil
- 3 cloves garlic, minced
- 1/2 teaspoon fresh ginger, minced
- 1/2 - 1 teaspoon crushed red peppers (to desired spiciness)
- salt and pepper
- 1 bunch green onions, diced (don't skip this!)
Chicken, Spinach and Mushroom Manicotti

Preheat oven to 400. Fill up a 9 x 13 dish with warm water
- 1 (8 oz) box manicotti tubes
- 1 pound ground chicken
- 1 tsp ground cinnamon
- 1 pinch red pepper flakes
- 1 Tbs. extra-virgin olive oil
- 8 oz baby bella mushrooms, finely chopped
- 3 cloves garlic, minced
- 5 oz baby spinach
- 3/4 cup ricotta cheese (roughly, whatever you want)
- 2 Tbs. fresh parsley, plus more for garnish
- 2 (14.5 oz) cans diced tomatoes
- 1/3 cup heavy cream
- coarse salt and freshly ground pepper
Slow Cooker Chicken Tortilla Soup

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker
- 1 pound shredded, cooked chicken
- 1 (15 ounce) can whole peeled tomatoes, mashed
- 1 (10 ounce) can enchilada sauce
- 1 medium onion, chopped
- 1 (4 ounce) can chopped green chile peppers
- 2 cloves garlic, minced
- 2 cups water
- 1 (14.5 ounce) can chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 (10 ounce) package frozen corn, or fresh if in season
- Crumbled tortilla chips

In an 8 quart stock pot, put in chicken, skin and all, and fill with water until about 2 inches from the rim
