Roast jalapenos under broiler or over flame until skin is charred
- * 2 16-ounce cans of black-eyed peas, drained and rinsed
- * 10 medium tomatoes, seeded and diced
- * 1 medium green pepper, diced
- * 1 yellow onion, small diced
- * 2 jalapenos
- * 1 bunch of cilantro, finely chopped
- * 4 limes, juiced
- * 3 cloves chopped garlic
- * Kosher salt to taste
- * Black pepper to taste
ORANGE JULIUS

Mix in blender 30 seconds adding ice cubes a few at a time
- 6 oz. can frozen orange juice concentrate
- 1 1/2 c. water
- 1/2 c. milk
- 1/2 c. sugar
- 1 tsp. vanilla
- 14 ice cubes
- For more nutrition and an equal treat
- reverse milk and water.
Tomato Bulgur Soup

1. Put the oil in a large pot or Dutch oven over medium heat
- * 2 tablespoons olive oil
- * 1 large onion, halved and sliced
- * 1 large celery stalk, chopped
- * 1 tablespoon minced garlic
- * Salt and black pepper
- * 1/2 cup white wine
- * 3 cups chopped tomatoes (canned are fine; include their juice)
- * 1 tablespoon chopped fresh thyme, or 1 teaspoon dried
- * 5 to 6 cups vegetable stock or water, or more as needed
- * 3/4 cup bulgur
- * 1/4 cup chopped fresh parsley, for garnish, optional
- * 1/2 cup grated Parmesan cheese, for garnish, optional
