Baked Chicken Tortillas

Preheat oven to 350°. Combine 1/2 cup salsa and sour cream in a small bowl, and spread evenly over each tortilla
- 1 * 1 cup bottled salsa, divided
- 1 * 1 (8-ounce) carton low-fat sour cream
- 6 * 6 (10-inch) flour tortillas
- 1 1/2 * 1 1/2 cups chopped cooked chicken breast (about 3/4 pound)
- 1/3 * 1/3 cup chopped tomato
- 1/3 * 1/3 cup chopped green or red bell pepper
- 1/4 * 1/4 cup chopped onion
- * Cooking spray
- 3/4 * 3/4 cup (3 ounces) shredded reduced-fat cheddar cheese
Dark Chocolate Mud Cake

A great chocolate cake for a durable cake recipe
- 200 g (7 oz) dark chocolate, chopped coarsely
- 250 g (9 oz) butter, diced
- 330 ml milk (1 3/8 cup) (I like to use whole fat milk)
- 440 g (2 1/4 cup) granulated sugar
- 2 large eggs, lightly beaten
- 180 g (1 1/4 cup) all-purpose flour
- 80 g (3/4 cup) self-raising flour
- 80 g (3/4 cup) dark cocoa powder
- 9 ″ 23cm (3″ high) round cake pan. Greased and prepared with baking paper. Remember to make a collar.
- Preheat oven to 160 C (320 F) Do not use the fan.

- 4 tablespoons water
- 2 tablespoons light corn syrup
- 1/2 cup heavy cream
- 2 tablespoons butter
- 1/2 teaspoon lemon juice

Slow Cooker Steak Chili

Heat oil in a large saute pan over medium heat; add steak, onion and garlic
- 2 T. oil
- 2 lbs. beef round steak, cut into 1-inch cubes
- 1-1/2 c onion, chopped
- 2 cloves garlic, minced
- 1-1/3 c water, divided (1 cup and 1/3 cup)
- 1 c celery, chopped
- 2 15-oz cans kidney beans, drained and rinsed
- 2 14-1/2 oz. cans diced tomatoes
- 16 -oz. jar salsa
- 15 -oz. can tomato sauce
- 1-1/2 T chili powder
- 1 t. ground cumin
- 1 t. dried oregano
- 1/2 t. pepper
- 2 T. flour
- 2 T. cornmeal
- Garnish: diced tomatoes, sour cream, crushed tortilla chips or shredded cheddar cheese

Peppermint bark popcorn

Peppermint Bark Popcorn After I did Monster Munch back in October, I heard from several people that they had eaten...
- 16-20 C popped popcorn (fresh, or about 2 bags microwave popcorn)
- 1 lb Almond Bark
- 1 6oz box candy canes, crushed. (About 1-1 1/2 C total and Bob's are the best!)
- 2 tea. peppermint extract
- 3/4 C semi-sweet chocolate chips
- one *one bag microwave popcorn has about 10 cups in it, so if you're air-popping, do about 20 cups.
Easy Marinara Sauce

1. In a large pot, heat the olive oil over a medium-high heat
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- Pinch of fennel seed
- 1/8 teaspoon crushed red pepper
- 1 bay leaf
- 2-28 oz. cans crushed tomatoes
- 1/4 teaspoon sugar
- Salt and black pepper, to taste
- 1/4 teaspoon dried oregano
- 1/3 cup freshly chopped basil
