Ricotta and Spinach Stuffed Portobellos

- 4 large portobello mushroom caps
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper, divided
- 1 cup part-skim ricotta cheese
- 1 cup finely chopped fresh spinach
- 1/2 cup finely shredded Parmesan cheese, divided
- 1/2 teaspoon Italian seasoning
- 3/4 cup prepared spaghetti sauce

- 1 fryer, cut up
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper
- 1/2 bell pepper, diced
- 1 medium onion, chopped
- 1/2 cup chopped celery
- 1 clove garlic, minced
- Dash Kitchen Bouquet
- Dumplings
- 1 cup flour
- 1/2 teaspoon salt
- 1 tablespoon shortening
- 1 egg, beaten
- Cold water
- Black Pepper
Lazy Man's Lobster Casserole

Just a few more ingredients than a traditional lobster casserole makes this the best one you may have ever tasted!
- 1 pound cooked lobster chunks
- 3 tablespoons butter
- 1 tablespoon olive oil
- 2 cups light cream, or half and half
- 1/4 cup dry sherry, or white wine
- 2 cups baby Bella mushrooms, sliced
- 1 shallot, diced
- 1 garlic clove, chopped
- 1/4 cup fresh parsley, chopped
- 1 1/2 cups buttery crackers finely crumbled (Ritz crackers or alternative)
Country Quiche

Preheat the oven to 350 degrees F
- 1 pound ground pork sausage with sage
- 1 teaspoon baking powder
- 20 grape tomatoes, sliced in half and sprinkled with salt
- 6 large eggs
- 10 ounces sharp Cheddar cheese, grated (about 2 1/2 cups)
- Salt and pepper
- Two 9-inch unbaked frozen pie shells (set them out to thaw while preparing the other ingredients)
Sausage and Quinoa Stuffed Zucchini

- 1 huge zucchini or 3-4 normal ones
- 1 tablesoon olive oil
- 3 links turkey Italian sausage, casing removed
- 1/2 Vidalia onion, diced
- 2 cloves garlic, minced
- 3/4 cup fresh tomatoes, chopped
- handful of fresh basil, chopped
- a few springs of fresh thyme and oregano (optional)
- 1/2 cup dry quinoa, prepared
- 1/4 cup chicken or vegetable broth
- 1/4 cup grated Romano cheese plus more for topping
- salt and pepper to taste
Medallions of Pork with Dried Cherries and Apple Juice Reduction

I picked up a center cut pork fillet the other day and was looking for some inspiration
- 1.5 pound of center cut pork loin or pork tenderloin
- Salt and Pepper
- 2 cups apple juice, organic, unsweetened, unfiltered
- 1/2 cup dried cherries
- 1/2 tsp dried thyme
- 1 tbsp Canola Oil
- 1 tbsp unsalted butter
Caprese Salad

- 3 Heirloom Tomatoes, various colors, sliced
- 12 oz Fresh Mozzarella, sliced
- Fresh basil leaves-- green, purple or both
- Extra Virgin Olive Oil
- Salt and Pepper to taste
- Balsamic Vinegar
Amaretto Cake

Preheat oven to 350 degrees F (175 degrees C)
- 1 (18.25 ounce) package yellow cake mix
- 4 eggs
- 1 (5.1 ounce) package instant vanilla pudding mix
- 2 tablespoons amaretto liqueur
- 1/2 cup water
- 1/2 cup vegetable oil
- 1/4 teaspoon almond extract
- 1/2 cup amaretto liqueur
- 1 cup sifted confectioners' sugar

Heat oven to 325 degrees. Grease and flour bundt pan
- Cake:
- 1/2 Cup Chopped Pecans
- 1 Fudge or Devil's Food Cake Mix
- 1 Pkg (3.9 Ounces) Instant Fudge Pudding Mix
- 1/2 Cup Kahlua
- 1/2 Cup Water
- 1/4 Cup Vegetable Oil
- 4 Eggs
- Topping:
- 1 Cup Sugar
- 1/2 Cup Unsalted Butter
- 1/4 Cup Water
- 1/3 Cup Kahlua
Bisquick Sausage Balls
