Rhubarb Crunch

For filling: 1. In a large bowl, stir together granulated sugar, orange zest and orange juice
- 1 cup granulated sugar
- 1 1/2 teaspoons orange zest
- 2 tablespoons orange juice
- 6 cups sliced fresh rhubarb (about 2 pounds) or frozen unsweetened sliced rhubarb, thawed but not drained (about 1 1/2 pounds)
- 1 tablespoon butter, softened
- 2 slices firm-textured white or whole wheat sandwich bread, cut into quarters
- 3/4 cup finely chopped pecans, macadamia nuts or almonds
- 1/2 cup finely crushed graham crackers
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon or apple pie spice
- 1/4 teaspoon ground ginger or ground nutmeg
- 1/8 teaspoon salt
- 1/4 cup butter, melted
- Vanilla ice cream or whipped cream
Sweet and Savory Spiced Nuts

Preheat oven to 350′F and line a baking sheet with unbleached parchment paper
- 2 cups mixed nuts – almonds, walnuts, cashews, pecans, hazelnuts (preferably soaked and dehydrated)
- 1 and 1/2 TBS coconut oil, butter, or ghee
- 2 TBS raw honey
- 1/2 tsp cumin powder
- 1/2 tsp chili powder
- 1/8 tsp coriander powder
- pinch of turmeric
- 1/4 tsp cinnamon powder
- 1/4 tsp ginger powder
- 1 tsp celtic sea salt
- OPTIONAL: a titch of cayenne for some heat
- 2 cups nuts of choice (almond, hazelnut, pecans, walnuts, cashews)
- 1 and 1/2 TBS coconut oil, butter, or ghee
- 2 and 1/2 TBS coconut sugar
- 1 TBS water
- 1/4 tsp cumin powder
- 1/4 tsp coriander powder
- 1/4 tsp cinnamon powder
- 1/4 tsp ginger powder
- 1/4 tsp celtic sea salt
- OPTIONAL: a titch of cayenne for some heat
Caramelized Bacon

Preheat the oven to 375 degrees F
- thye1/2 cup light brown sugar, lightly packed
- 1/2 cup chopped or whole pecans
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/8 teaspoon ground cayenne pepper
- 2 tablespoons pure maple syrup
- 1/2 pound thick-sliced applewood-smoked bacon (such as Nodine's)
Chex® Caramel Chocolate Drizzles

1. In large microwavable bowl, mix cereals
- 3 cups Corn Chex® cereal
- 3 cups Rice Chex® cereal
- 1/2 bag (14-oz size) caramels (about 25)
- 2 tablespoons butter or margarine
- 2 tablespoons milk
- 1/4 cup semisweet chocolate chips
Wild Rice Soup

Combine rice & boiling water in large saucepan
- 1 c. uncooked wild rice
- 3 c. boiling water
- 2 slices bacon
- 1/4 c. chopped onion
- 3/4 c. sliced celery
- 1/2 c. sliced carrots
- 1 14 oz. can chicken broth
- 2 cans cr. of mushroom soup
- 2 soup cans milk
- 1 can mushrooms, do not drain
- 1 tsp. salt
- Pepper to taste
Cream of Mushroom & Barley Soup

1. Bring barley and 1 1/2 cups broth to a boil in a small saucepan over high heat
- 1/2 cup pearl barley
- 4 1/2 cups reduced-sodium chicken broth, or mushroom broth (see Shopping Tip), divided
- 1 ounce dried porcini mushrooms
- 2 cups boiling water
- 2 teaspoons butter
- 1 tablespoon extra-virgin olive oil
- 1 cup minced shallots, (about 4 medium)
- 8 cups sliced white mushrooms, (about 20 ounces)
- 2 stalks celery, finely chopped
- 1 tablespoon minced fresh sage, or 1 teaspoon dried
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 2 tablespoons all-purpose flour
