Sausage Brioche Dressing

- 1 brioche loaf, cubed into 1-inch pieces
- 1 pound pork breakfast sausage
- 4 celery ribs, halved lengthwise and cross cut into 1/4-inch pieces
- 4 cups stock
- 1/4 cup chopped sage leaves
- Kosher salt and fresh ground black pepper

Heat the oil in a large nonstick skillet over medium heat
- 1 tablespoon canola oil
- 1 1/2 tablespoons minced fresh ginger
- 4 cloves garlic, peeled and thinly sliced
- 1 handful shredded carrots, optional
- 1 large onion, diced
- Salt and freshly ground black pepper
- 1 teaspoon turmeric
- 1/2 teaspoon smoked Spanish paprika
- 1/4 teaspoon garam masala
- 2 tablespoons ketchup

- One 12-ounce package hot dogs, sliced about 1/16-inch thick, such as Hebrew National
- Handful fresh cilantro leaves, minced

Whisk the mayonnaise, sour cream, adobo sauce, ketchup and lime juice together in a large bowl
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 tablespoons canned adobo sauce (from chipotle chiles in adobo)
- 2 tablespoons ketchup
- 2 tablespoons fresh lime juice
- Salt and freshly ground black pepper
- 1/3 cup chopped red bell pepper (from about 1/2 bell pepper)
- 1 tablespoon chopped fresh cilantro, plus sprigs for garnish
- 1 pound cooked Dungeness crab meat, picked
- 4 avocados, peeled, pitted
Croissant French Toast

Directions For the blackberry syrup: In a saucepan, combine the blackberries, sugar and 1/2 cup water

- 1 pint fresh blackberries
- 1 cup sugar
- 2 tablespoons cornstarch

- 8 croissants (a rounder shape is best)
- 1/4 cup half-and-half
- 2 tablespoons sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 5 large eggs
- Butter, for frying and serving
- Warm maple syrup, for serving
- Strawberries, for serving
- Whipped cream, for serving

- 3/4 cup lager-style beer

- 1 tablespoon cayenne pepper
- 1 tablespoon paprika
- 3 (1 pound each and 1/2-inch thick) prime-aged New York Strip Steaks
