- 1 tablespoon olive oil
- 1 medium yellow onion, finely chopped

- 3/4 pound eggplant, chopped into bite-sized pieces (about 3 cups)
- 1 small zucchini, cut into bite-sized pieces

- Salad:
- 1 cup chopped walnuts
- 1 package Ramen Noodles, uncooked and broken
- 4 tablespoons unsalted butter
- 1 bunch broccoli, chopped
- 1 head romaine lettuce, washed and broken
- 1 cup sweet and sour dressing
- Sweet and Sour Dressing (yields 2 1/2 cups):
- 1 cup vegetable oil
- 1 cup sugar
- 1/2 cup wine vinegar
- 1 tablespoon soy cause
