- 3/4 cup chicken broth

Nutty-Good Salad with Chicken

To make the candied pecans, lay a medium piece of aluminum foil near the stove
- 1/2 oz. (about 2 tbsp.) chopped pecan halves (8 - 10 halves)
- 1 tsp. brown sugar (not packed)
- 1/2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
- Drop vanilla extract
- 2 dashes salt
- One 4-oz. raw boneless skinless chicken breast cutlet, pounded to 1/3-inch thickness (see HG Tip!)
- Dash each garlic powder and onion powder
- 2 cups chopped romaine lettuce
- 1 cup mixed greens
- 1/4 cup chopped celery
- 2 tbsp. mandarin orange segments packed in juice, drained
- 1 tbsp. sweetened dried cranberries
- 1 tbsp. crumbled blue cheese
- 2 tbsp. fat-free or low-fat balsamic vinaigrette
Strawberry Romaine Salad

This is a refreshing and pretty salad
- 1 head romaine lettuce - rinsed, dried, and chopped
- 2 bunches fresh spinach - chopped, washed and dried
- 1 pint fresh strawberries, sliced
- 1/2 cup mayonnaise
- 2 tablespoons white wine vinegar
- 1/3 cup white sugar
- 1/4 cup milk
- 2 tablespoons poppy seeds
- Can also add mandarin oranges, chopped glazed walnuts

- 3 tablespoons Wildtree Sweet & Spicy Thai Chili Sauce
- 3 tablespoons light mayo
- 1 pound ground chicken

- 4 buns
- 4 slices red onion

- I chicken, cut in pieces (I like to cut the breasts in half for more even cooking)
- 2 Meyer lemons, washed and cut in 1/4 inch slices
- a handful of fresh thyme sprigs
- salt and fresh ground black pepper
