Black Bean, Corn and Tomato Salad

In large pot cover beans with cold water
- 1 pound dried black beans
- 4 plum tomatoes, chopped
- Salt
- 2 cups corn kernels
- 1/2 red onion, chopped
- 1 bunch cilantro, chopped
- Juice of 1 lime
- 1/4 cup olive oil
- Pepper
- Cayenne
Chicken Pot Pie for Two

To simplify our Chicken Pot Pie for Two, we opted to make two individual pies inside of ramekins
- We use two ovensafe 12-ounce ramekins or bowls to make this dish. If you don't own any, you can use 14-ounce disposable mini loaf pans, cutting the crust to fit.
- 1 Pillsbury Just Unroll! Pie Crust
- 2 tablespoons unsalted butter
- 2 carrots, peeled and sliced 1/4 inch thick
- 1 small onion, chopped fine
- 1 small celery rib, sliced 1/4 inch thick
- Salt and pepper
- 2 garlic cloves, minced
- 1 teaspoon minced fresh thyme
- 3 tablespoons all-purpose flour
- 1 3/4 cups low-sodium chicken broth
- 1/3 cup heavy cream
- 1/2 teaspoon soy sauce
- 1 (8-ounce) boneless, skinless chicken breast, trimmed
- 1/4 cup frozen peas
- 2 teaspoons minced fresh parsley
- 1/4 teaspoon lemon juice
No Bake Sugar Free Cheescake

Cauliflower Salad with Zesty Vineigrette

1. Combine the first 4 ingredients in a large bowl
- 3 Cups small cauliflower florets
- 2 cups cooked multicolor rotini (about 4 ozs uncooked corkscrew pasta)
- 1/3 cup sliced green onions
- 1/3 cup thinly sliced radishes
- 3/4 cup Garlicky tomato -basi vinaigrette
- 2 Tbls grated parmesan cheese
- 1/8 tsp black pepper
Classic Bread Dressing

- 1 lb. loaf good-quality white bread or baguette, cut into 1/2 inch cubes (10 to 12 cups)
- 8 Tbs. unsalted butter
- 3 cups 1/4 inch diced onion
- 2 cups chopped celery (including inner leaves)
- 1 clove garlic, finely chopped
- 1 1/2 Tbs. chopped fresh thyme (or 1 1/2 tsp. dried)
- 1 tsp. celery seeds
- Pinch grated nutmeg
- Pinch ground cloves
