- •4 egg yolks
- •1 tablespoon freshly squeezed lemon juice
- •1/2 cup unsalted butter, melted (1 stick)
- •Pinch cayenne
- •Pinch salt
Red Wine Braised Short Ribs

Preheat oven to 325 degrees F
- •4 English cut beef short ribs, trimmed (roughly 8 ounces each)
- •Kosher salt and freshly cracked black pepper
- •3 tablespoons unsalted butter, divided
- •1 bottle full bodied red wine, such as Cabernet
- •4 cups low-sodium vegetable stock
- •4 cloves garlic, peeled and smashed
Grilled Provoleta

- •1/2 pound provolone, in 1 whole round slice
- •2 tablespoons olive oil
- •2 teaspoons dried oregano
- •1 teaspoon red chili flakes
- •Bread slices
- •Chimichurri, recipe follows
Avocado & Roasted Garlic Dip

Dip: Mash the avocado (lumpy, not smooth) Blend in the garlic, lemon juice, parsley, oregano, salt, pepper
- 4 roasted garlic heads (instructions follow), prepare ahead of time and chop for the dip recipe
- 3 pounds avocados
- 1/3 cup lemon juice
- 1/4 cup parsley, chopped
- 1/2 tablespoon dried oregano
- 1/2 tablespoon salt
- 1/2 teaspoon ground pepper
Chicken Marsala

I made this recipe without the mushrooms, and was still delicious
- 4 tablespoons butter
- 4 boneless skinless chicken breast halves
- 4 shallots, chopped fine
- 1/2 lb mushrooms, sliced (or some condensed cream of celery soup, experiment with quantity)
- 1/4 cup dry marsala
- 1/2 cup heavy cream 1 teaspoon lemon juice
Sausage O'Patties

- 1 small Idaho potato, peeled
- 1 small onion, coarsely chopped, about 1/3 cup
- 3/4 pound ground pork
- A few sprigs fresh parsley
- 1 teaspoon ground thyme, 1/3 palm full
- Salt and pepper
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan

- Frosting:
- 1/2 •1/2 cup heavy cream
- 1 •1 cup whole milk
- 1/2 •1/2 vanilla bean, split and seeds scraped
- 7 •7 tablespoons all-purpose flour
- 3 •3 sticks unsalted butter, at room temperature
