  • 1/2 cup chicken stock or canned low-sodium chicken broth, heated
  • 2 teaspoons chopped fresh tarragon leaves
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 3 large egg yolks
  • Quick Cooked Chicken, diced, recipe follows, or 2 1/2 cups shredded or diced cooked chicken
  • 1 teaspoon chopped parsley leaves
