Chicken Pot Pie (individuals)

Preheat the oven to 350 degrees F
- Filling:
- •3 whole (6 split) chicken breasts, bone-in, skin-on
- •3 tablespoons olive oil
- •Kosher salt
- •Freshly ground black pepper
- •5 cups chicken stock, preferably homemade
- •2 chicken bouillon cubes
- •12 tablespoons (1 1/2 sticks) unsalted butter
- •2 cups yellow onions, chopped (2 onions)
- •3/4 cup all-purpose flour
- •1/4 cup heavy cream
- •2 cups medium-diced carrots, blanched for 2 minutes
- •1 (10-ounce) package frozen peas (2 cups)
- •1 1/2 cups frozen small whole onions
- •1/2 cup minced fresh parsley leaves
- Pastry:
- •3 cups all-purpose flour
- •1 1/2 teaspoons kosher salt
- •1 teaspoon baking powder
- •1/2 cup vegetable shortening
- •1/4 pound cold unsalted butter, diced
- •1/2 to 2/3 cup ice water
- •1 egg beaten with 1 tablespoon water, for egg wash
- •Flaked sea salt and cracked black pepper
Honey Game Hens

Rinse hens, trim off excess fat, and pat dry; place in bowl
- •6 Cornish game hens (about 3/4 to 1 pound each)
- •4 cloves garlic, chopped
- •1 (1-inch) piece of ginger, peeled and chopped

- 1 garlic clove, minced
- 1 can (14.5-ounce) diced tomatoes, juices drained

Cream Cheese Stuffed New Potatoes

- •24 bite-size new potatoes, scrubbed, with a tiny sliver cut off each potato so they will stand after filling
- •1 (5-ounce) package soft garlic herb cheese (recommended: Boursin)
- •4 tablespoons (1/2 stick) butter, softened
- •1/3 cup whipping cream
- •Freshly ground black pepper
- •Finely chopped fresh parsley leaves
- •Red caviar, for garnish, optional

- 1/2 onion, sliced
- 1/2 c. water
- 1 tablespoon worchestershire
- 1/2 c. dry red wine
- 1 (8 ounce) can tomato sauce
- 3 med. onions, cut in sixths
- 1 lb. carrots, pared and cut in chunks
- 1 lb. (about 8) sm. potatoes, pared
- 1/2 c. water
- 1/2 tsp. salt
Potato-Bacon Torte

- Pie Crust:
- 4 strips bacon
- 3 sprigs fresh thyme
- 2/3 cup heavy cream
- 2 Pie Crusts, recipe follows
- 3 medium baking potatoes, peeled
- Salt and freshly ground black pepper
- 1/4 cup grated Gruyere cheese
- 1 egg yolk, whisked with a splash of water
- 1 cup butter (2 sticks), cubed and chilled
- 2 1/4 cups all-purpose flour
- 1 teaspoon salt
- 8 to 10 tablespoons ice water

Rigatoni alla Carbonara

Rigatoni alla Carbonara (Bacon and Egg Coal Miner's Pasta)
- •Salt
- •1 pound rigatoni
- •1/3 pound pancetta, cured Italian meat, available at deli counter, chopped
- •Drizzle extra-virgin olive oil, plus 2 tablespoons (2 turns around the pan)
- •4 or 5 cloves garlic, finely chopped
- •1/4 teaspoon crushed red pepper flakes, a few pinches, crushed in palm of hand
- •1/2 cup dry white wine or chicken stock
- •2 large egg yolks
- •3 tablespoons (about 2 palmfuls) grated Parmigiano Reggiano, plus more, for sprinkling
- •A handful fresh parsley leaves, finely chopped
- •A few grinds black pepper
