- 1/2 cup whole wheat flour
- 2/3 cup oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon

- 1/3 cup dark molasses
- 2 eggs
- 1 cup mashed banana, about 2 bananas
- 1/3 cup lowfat yogurt, banana yogurt good sub

Beer-Marinated Chicken Tacos

1. To make the marinade: In a small bowl whisk together the marinade ingredients
- For the marinade:
- 1 cup dark Mexican beer, such as Negro Modelo
- 2 tablespoons dark sesame oil
- 1 tablespoon minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon cayenne
- 6 boneless skinless chicken breast halves
- For the guacamole:
- 2 avocados, ripe
- 1 tablespoon fresh lime juice
- 1/4 teaspoon kosher salt
- 6 flour tortillas, or corn, 6 to 7 inches in diameter
Cafe Pasqual's Cilantro Rice

1. Bring rice, water & 1 teaspoon salt to a boil
- 1 1/2 cups rice
- 2 cups water
- 1 1/2 tsp kosher salt
- 1 cup cilantro
- 1/2 cup chopped onion
- 1/4 cup chopped scallion
- 1 1/2 tbsp minced jalapeno, with seeds
- 1 1/2 tbsp lime juice

- Olive Oil Cooking Spray
- Lawry's Seasoned Salt (no substitutes)

Indian-Inspired Turkey Burgers

Mix all of the ingredients, except the olive oil together and form into patties (depending on the size of the buns)
- 3/4 lb lean ground turkey
- 1/3 cup very finely chopped green pepper
- 1/3 cup very finely chopped scallions/green onions
- 1/2 cup finely chopped cilantro
- 1 tbsp red chili powder (or less)
- 1 tbsp ground coriander
- 1 pinch cumin powder
- 1 pinch nutmeg
- 1 tsp dried mint
- 1 tbsp ginger and garlic paste
- 2 tbsp plain bread crumbs
- Salt, to taste
- 1 tbsp extra virgin olive oil
- Pepperjack cheese slices (optional)
- Lettuce and tomato to assemble the burger
