Cracker Barrel Ham and Egg Casserole

This Copycat Cracker Barrel Ham and Egg Casserole is an easy overnight breakfast recipe for the whole family
- 1/3 cup lean cooked diced ham†(country cured ham if available)
- 1 slice sourdough bread†(remove crust and cut to fit bottom of casserole dish)
- 4 to 5 eggs, beaten (you want one cup of eggs)
- 1/4 cup evaporated milk
- 1/4 teaspoons salt
- 1/4 teaspoons ground black pepper
- 1/2 cup shredded mild cheddar cheese
Banana-Strawberry Daiquiri

. Puree 10-oz. box strawberries in a blender until smooth
- 1 (10-oz.) box frozen strawberries in syrup, thawed
- 3 cups "warm" ice (see below)
- 1 cup frozen strawberries, thawed
- 1 very ripe medium banana

- 1/2 cup pineapple juice
- 1/4 cup cream of coconut
Knock Your Socks Off Slow Cooker Chicken

Although this one pot recipe is super simple to make, it's packed with big flavor that makes it taste gourmet
- 1 1/2 lbs boneless skinless chicken breasts
- 1 package andoulle sausage (Or you can use smoked sausage, kielbasa, use what you like most)
- 1 8 oz package cream cheese, room temperature
- 1 cup chicken stock
- 1/2 cup white wine (you can also sub this with beer or chicken stock)
- 3 gloves of garlic minced
- 1 small yellow onion diced
- 2 tbs grainy mustard
- 1/2 tsp salt
- scallions for garnish
- serve over white rice or buttered noodles
French Vanilla Cobbler

This peach cobbler recipe tastes fancy, but without all of the fuss
- 2 15-ounce cans peach chunks in light syrup
- 1 box French Vanilla cake mix
- 1/2 cup unsalted butter
- 1 teaspoon cinnamon sugar (1/4 teaspoon cinnamon + 3/4 teaspoon sugar)
Slow Cooker Recipe for Louisiana-Style Red Beans and Rice

Southern red beans and rice is a dish that is full of rich, hearty flavor
- 1 large onion, diced small
- 2-3 tsp. olive oil
- 1 T minced garlic
- 1 T Tony Chachere's Creole Seasoning (or other Creole seasoning of your choice)
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- salt and black pepper to taste (I didn't use salt because the Tony Chachere's seasoning has salt, and I only used a little bit of pepper)
- 4 cups cooked small red beans (or use 3 cans red beans, rinsed and drained and add 1/2 cup more chicken stock)
- 3 cups diced lean ham or Louisiana Hot Sausages (dice into pieces about the size of the cooked beans)
- 3 cups homemade chicken stock or canned chicken broth
- 1 T Worcestershire sauce
- 1 tsp. Green Tabasco Sauce (or use a smaller amount of red Tobasco)
- 2-3 bay leaves
- 1 tsp. red wine vinegar
- 3 cups cooked white rice for serving

- 4 pounds boneless skinless chicken breasts, cut into 1⁄2-inch pieces
- 1 tablespoon olive oil
- 1 package (1 ounce) Italian salad dressing mix
- 2 cups sliced mushrooms
- 1 cup chopped onion
- 1 can (10 3⁄4 ounces) condensed low-fat cream of chicken soup, undiluted 1 bag (10 ounces) frozen broccoli florets, thawed
- 1 package (8 ounces) low-fat cream cheese, cubed
- 1 ⁄4 cup dry sherry
- Hot cooked pasta

- For the Roux:
- 3 3 3 lbs large shrimp, peeled, deveined
- 3 3 2? lbs chicken breast, chopped 2? chunks
- 3 3 3 lbs smoked sausage
- 1 1 1 pack of smoked turkey, wings, or legs
- 1 1 1 pack dried shrimp
- 2 2 2 bunch green onions, chopped
- 2 2 2 bunch parsley, washed, chopped stems removed
- 1 1 1 white onion, chopped
- 1 1 1 bell pepper, chopped
- 1 1 1 head of garlic, chopped
- 1 1 1 head of celery, chopped
