Butternut Crab Bisque

Peel and Cube Butternut Squash
- 1 Pound Crab Meat
- 2 Liters Vegetable Broth
- 2 Medium Butternut Squash
- 1/2 lb carrots
- 6 cloves of garlic
- 2 onions
- 1/2 stick of butter (can you get real butter if it's ok?)
- 1 cup of white wine
- Salt and pepper to taste
- olive oil

Combine chopped figs and 1/3 cup water in heavy medium saucepan
- 1 * 1 cup chopped stemmed dried Calimyrna figs
- 1/3 * 1/3 cup water
- 1 * 1 cup chopped pitted Kalamata olives or other brine-cured black olives
- 2 * 2 tablespoons extra-virgin olive oil
- 1 * 1 tablespoon balsamic vinegar
- 1 1/2 * 1 1/2 teaspoons chopped fresh thyme
- 2 * 2 5.5-ounce logs soft fresh goat cheese (such as Montrachet), each cut crosswise into 1/2-inch-thick rounds
- 1/2 * 1/2 cup chopped toasted walnuts
- 1/4 * 1/4 cup toasted walnut halves
- * Fresh thyme sprigs (optional)
- * Assorted breads and/or crackers
Pork Tenderloin with Peach Compote

DIRECTIONS: For the marinade: Add all ingredients for the pork marinade to a large bowl and mix well
- Pork Marinade
- 2 cloves garlic, smashed
- 1/2 teaspoon crushed fennel seed
- 1 tablespoon fresh chopped thyme
- 1 tablespoon fresh chopped rosemary
- 2 tablespoons fresh chopped sage leaves
- 2 tablespoons kosher salt
- 1 tablespoon cracked black pepper
- 1/4 cup extra-virgin olive oil
- 3 tablespoons good quality balsamic vinegar
- Pork
- 1 1/2 to 2 pounds of pork tenderloin
- olive oil
- Peach compote
- 3 cups fresh peaches, yellow and white, cut into small wedges
- 1/2 cup granulated sugar
- 1/2 teaspoon fresh-cracked black pepper
- 1/2 cup of White Wine
- 1/4 cup toasted sliced almonds
- 1 cup water
- olive oil
Broccoli & Leek Pasta with Lemon

Cook Pasta. Meanwhile, heat butter and oil in a skillet
- 1 lb of Rigatoni or similar pasta
- 2 leeks, diced
- 1 head of broccoli, chopped into bite size pieces
- 1 lemon & zest
- 2 tbs of Olive Oil
- 1 tbs of Butter
- 1/2 teaspoon of crushed red pepper
- 1/2 cup of fresh parsley, finely cut
- salt and pepper to taste
- 1/4 cup of Parmesan
Roasted Red Pepper & Goat Cheese Pasta Salad

Cook pasta until Al Dente, add olive oil, and set aside to cool
- 1 lb of Farfalle
- 1/4 lb of Goat Cheese (A touch on the creamy side is best)
- 3 Red Peppers
- 3 tbsp of Extra Virgin Olive Oil
- Pepper to Taste
Rosemary & Lemon Chicken with Artichoke Hearts

Coat Chicken lightly with salt and pepper and then dip in flour
- 1 lb of Thinly sliced chicken Breasts
- 1/2 cup of Flour
- salt & pepper to taste
- 2 tbs of Olive Oil
- 2 tbs of Butter
- 2 Lemons
- 1 teaspoon of Rosemary
- 1 can of Artichoke Hearts
Jeweled Rice

Prepare and chop all ingredients ahead of time
- For the Spice Mixture:
- Ingredients: Serves 4
- 1 3/4 cups basmati rice
- 2 tsp of turmeric
- 1 ½ tbs of brown or sugar in the raw
- 3 tablespoons currants
- 3 tablespoons gold raisins
- 1/2 stick of butter
- 4 tbs of sunflower oil
- 1 small red onion, finely sliced
- 1 tsp of salt
- 1 lb carrots, finely chopped
- ½ red pepper, diced
- 3 cups of broth (chicken, beef or vegetable)
- 3 tbs of almonds, finely sliced
- 3 tbs of pistachio nuts, finely sliced
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp of cardamom
- 1 tsp of ground black pepper
- Pinch of nutmeg

Prepare your pastry for a two crust pie
- 6 cups thinly sliced apples
- 3/4 cup brown sugar
- 1 tablespoon butter
- 1 teaspoon ground cinnamon
- 1 recipe pastry for a 9 inch single crust pie
- 2 TBLS flou
- 1/2 teas vanilla
- 1/4 teas nutmeg
Grandma's Italian cookies

for cookies: add dry ingredients to a small ball In a separate bowl
- for cookies:
- 3/4 cup butter
- 1 cup sugar
- 2 eggs
- 1/3 cup milk
- 3 tsp. lemon extract
- 31/2 cups flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- for icing:
- 1 Box confectionair sugar
- hot water
- 1 teaspoon vanilla or almond extrack
Spiced Fish Kebabs

Mix all ingredients for the marinade in a bowl and add the fish cubes, turning until all cubes are completely cover...
- Marinade:
- 2 lb white fish (I used Tilapia) cut into 1 1/2-inch cubes.
- 1 Lemon
- 1 Teaspoon Ground Cumin
- 1 Teaspoon Choped Cilantro
- 1 Teaspoon Garam Masala*
- 1/4 Teaspoon Crushed Red Pepper
- 3 Cloves Garlic, Crushed
- 1 Teaspoon Chili Powder
- 1/2 Teaspoon of Salt
- 2 Tablespoons Natural Yogurt (I use Greek as that is easiest to find. Fage is good.)
