- 1 cup plain low-fat yogurt
- 1/4 cup fresh lemon juice
- 2 tablespoons minced garlic (about 6 cloves)
- 1/2 teaspoon salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 6 (6-ounce) skinless, boneless chicken breast halves
- 1 cup fat-free, less-sodium chicken broth
- 1 1/2 tablespoons olive oil
- 1 tablespoon chopped fresh parsley
Leg of Lamb - Slow Roasted

1. I used a full leg of lamb which is too long for most roasting trays
- 12 cloves of garlic, peeled
- 7 lb / 3.5 kg leg of lamb (Note 1)
- Salt and pepper
- 3 tsp paprika powder
- 3 tsp garlic powder (or sub with onion powder)
- 2 tbsp olive oil
- 2 large onions, quartered (white, brown, yellow, red)
- 10 sprigs of thyme
- 3 sprigs rosemary
- 3 tsp dried oregano
- 3 dried bayleaves (or 5 fresh)
- 1/2 cup / 125 ml lemon juice (2 - 3 lemons), plus more to taste
- 1 1/2 cups / 375 ml white wine (or sub with chicken broth/stock, low salt)
- 2 cups / 500 ml chicken broth (liquid chicken stock)
Manhattan Clam Chowder

In a 5-quart pot, combine the clams and 6 cups of cold water
- 2 dozen large chowder clams, well-washed
- 4 ounces bacon or salt pork, cut into 1/2-inch pieces
- 2 tablespoons vegetable oil
- 2 medium onions, cut into 1/4-inch dice
- 1 medium carrot, cut into 1/4-inch dice
- 1 large rib celery, cut into 1/4-inch dice
- 1 large green pepper, cut into 1/4-inch dice
- 1 1/2 pounds potatoes, cut into 1/2-inch cubes (about 3 cups)
- 1 (28-ounce) can peeled plum tomatoes, with their juice, the tomatoes coarsely chopped
- 1 teaspoon dried thyme
- 1 large bay leaf
- Freshly ground black pepper
- Salt to taste
Almond-Herb Couscous

In small pot boil 3/4/ c water Remove from heat Stir in couscous Cover and let sit 5 min Toss with fork and mix
- 3/4 c. couscous
- 2 T sliced almonds, toasted
- 1 c. chopped fresh chives
- 1/2 c chopped fresh parsley
- 1/4 c chopped fresh mint
- 1 T olive oil
- 2 T lemon juice
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/2 tsp ground pepper
Mashed Potato Casserole with Sour Cream and Chives

Makes a lot
- 14 tablespoons unsalted butter, softened, and more for the pan
- 6 pounds russet or Yukon Gold potatoes, peeled and cut into chunks
- 2 tablespoons plus 1 teaspoon kosher salt
- 1 1/2 cups sour cream
- 1 teaspoon black pepper
- 6 tablespoons finely chopped chives
- 2/3 cup bread crumbs
- 2/3 cup grated Parmigiano-Reggiano cheese
Polenta with Black Beans and Mango Salsa

Cooked polenta packaged in rolls makes an easy base for this and other dishes
- 1 package (24 ounces) cooked polenta, cut into 1/2-inch-thick slices
- 1/2 cup vegetable broth
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 orange or yellow bell pepper, chopped
- 2 cloves garlic, crushed or minced
- 2 cans (15 ounces each) black beans, drained and rinsed
- 1 can (15 ounces) crushed tomatoes
- 1 can (4 ounces) diced green chiles
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Dash or two of Tabasco or other hot sauce
- Freshly ground black pepper
- 1/4 cup chopped fresh cilantro
- 2 cups Mango Salsa Recipe or store bought mango salsa
Nurnberger Lebkuchen

German Gingerbread. From Shari in San Diego
- For the Cookies:
- 4 c. honey
- 3 c. firmly packed brown sugar
- 4 beaten eggs
- 1/4 c. lemon juice
- 4 tsp. grated lemon peel
- 9 1/3 c. flour, unsifted
- 4 tsp. cinnamon
- 2 tsp. ground allspice
- 2 tsp. ground cloves
- 2 tsp. ground nutmeg
- 2 tsp. salt
- 2 tsp. baking soda
- 1 1/3 c. finely chopped citron (or other dried fruit)
- 1 1/3 c. finely chopped almonds
- 80 (or so) 90 mm. back Oblaten (edible, like a communion wafer)(use parchment {not edible} paper if no Oblaten)
- 40 whole candied cherries, cut in half
- 400 whole blanched almonds (5 per cookie) about 1.5 to 2 lbs.
- For the Glaze:
- 4 c. unsifted powdered sugar
- 1.25 c. rum (or water)
Shrimp Monique

- 1.25 to 2 lbs. cooked shrimp (medium to large)
- 1 3/4 cup cider vinegar
- 1 1/4 cup vegetable oil
- 1 1/3 cup ketchup
- 4 tsp fresh lemon juice
- 10 minced or grated garlic cloves
- 5 1/2 tsp Morton Nature's Seasons Seasoning Blend
- (If you can't find it...it contains salt, pepper?, garlic, onion, and some other spices)
- 2 1/2 tsp dry mustard
- 5 T sugar
- 2 teaspoons celery seed (optional)
