Crab and Almond Appetizer - Baked

- 6 oz. crab meat, flaked
- 2 T. finely chopped onion
- 1 T. cream-style horseradish
- 1/4 tsp. pepper
- 1/3 c. slivered almonds
Chicken Parmesan

- 1/2 c. dijon mustard
- 1/4 c. apple juice
- 2 cloves garlic, minced
- 2 T. butter, melted
- 2 c. fresh soft bread crumbs
- 3/4 c. grated Parm
- 1/4 c. ground almonds
- 3 T. butter, melted
- 1/2 t. salt
- 1/8 t. pepper
- 1 tsp. dried basil
- 8 boneless, skinless, chicken breast halves.
Hazelnut Chocolate Chip Cookies

Preheat the oven to 325 degrees F
- 1/2 cup old-fashioned oats
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, room temperature
- 1 cup (packed) light brown sugar
- 1 cup sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 4 ounces English toffee candy (recommended: Heath or Skor bar), finely chopped
- 1 cup hazelnuts, toasted, husked, and chopped
- 1 (12-ounce) bag semisweet chocolate chips
Salmon Chowder ala Nordstrom

I think Nordstrom adds a few potatoes
- 2 tbsp olive oil
- 8 cloves garlic, minced
- 5 carrots, peeled and chopped
- 6 celery sticks, chopped
- 2 cans (49 oz ea) low-sodium chicken broth
- 2 cans (14.5 oz ea) diced tomatoes in juice
- 1 salmon fillet (about 2 lbs), skinned and cut into thirds crosswise
- 1/2 tsp Tabasco sauce
- 1 tsp Worcestershire sauce
- Kosher salt
- Freshly ground pepper
- 2 cups lightly packed fresh basil, coarsely chopped
Stewed Italian Beans

We used red and white (cannellini) kidney beans for colour, but you can use any kind
- 2 stalks celery, diced
- 1 carrot, diced
- 3 Tbs. extra-virgin olive oil
- 3 cloves garlic, minced
- 1/2 tsp. dried rosemary or thyme
- 2 Tbs. tomato paste
- 2 398 mL cans no-salt-added kidney beans
- 1/2 tsp. salt freshly ground black pepper
- 2 Tbs. balsamic vinegar
Pork and Green Chili Stew

1. Put large, deep skillet or dutch oven on high heat 2
- 1 1/2 lb. pork butt, trimmed of fat, cut into small strips
- 1 med. onion roughly chopped
- 1 T. minced garlic
- 1 14 oz. can diced tomatoes with juice
- 2 c. roughly chopped roasted green chilies (see recipe)
- Garlic powder (optional)
- Warm tortillas or rice
Greek-Italian Chopped Salad

To make this a substantial main course, add 1 1/4 pounds cooked shrimp
- 6 tablespoons olive oil
- 3 tablespoons white wine vinegar
- 1 teaspoon dried oregano
- 1 small garlic clove, minced
- 6 cups chopped romaine lettuce
- 1 15 1/2-ounce can garbanzo beans (chickpeas), drained
- 1 red bell pepper, diced
- 1 cup very thinly sliced red onion
- 1 cup very thinly sliced fresh fennel bulb
- 1/2 cup crumbled feta cheese (about 3 ounces)
- 2 ounces thinly sliced Italian Genoa salami, cut into strips
- 1/4 cup sliced pitted Kalamata olives

- 1 (1 1/2 to 2-pound) butternut squash, peeled, seeded, and cut into 1-inch cubes
