- 1/4 tsp salt

Roasted Elysian Fields Farm Lamb Rack with Honey Braised Chestnuts

1.) Marinate the lamb in the rosemary, olive oil and garlic mixture for two hours
- organic lamb rack (frenched, to remove some of the fat between the end of the ribs)
- 1 cup minced rosemary moistened with olive oil
- 1/2 cup of finely minced garlic
- 24 fresh chestnuts
- 1/2 cup of honey
- 2 Tbsp olive oil
- 3 cups chicken stock
- 1 bunch thyme
- Salt and pepper to taste
Gumbo Z'Herbes

1.) In a large pot, heat oil over medium
- 2 Tbs vegetable oil
- 2 ham hocks (about 1 1/2 lbs. total), with several 1/2" slits cut into them
- 1 medium onion, chopped
- 3 bunches (3 lbs. total) mixed collard and mustard greens, rinsed and chopped
- 3 cans (14.5 oz. each) reduced-sodium chicken broth
- 2 garlic cloves, minced
- 1 bay leaf
- 1/2 tspn dried thyme
- coarse salt
- 1/8 to 1/4 tspn cayenne pepper
- cooked white rice, for serving
Tiny Mint Chicken Burgers

1.) Combine all ingredients except olive oil in a bowl and mix thoroughly
- 1 lb. ground chicken or turkey
- 1 small red onion or yellow onion or green onion (finely chopped)
- 1 T finely chopped ginger
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh cilantro (including stems)
- 1 large egg (lightly beaten)
- 1 or 2 small green Thai chilies
- 1/2 tsp salt
- 1 tsp olive oil
Mediterranean Chicken Wrap

1.) Combine sauce ingredients in a mixing bowl; season with salt and pepper to taste
- For the yogurt sauce:
- 1 cup plain Greek yogurt
- 2 tsp fresh lemon juice
- 1 large garlic clove, minced
- 2 Tbsp chopped fresh dill
- 1 medium cucumber, peeled, seeded and finely chopped
- Salt and Pepper to taste
- For the wrap:
- 3 1/2 to 4 cups shredded cooked chicken
- 2 Tbsp olive oil
- 1 tsp dried oregano
- 1 medium sweet onion, thinly sliced
- 1 medium tomato, chopped
- 4 large pocketless pitas, warmed if possible
Tequila-Bloody Mary Cherry Tomatoes with Margarita Dipping Salt

1.) With a wooden or metal skewer, puncture each cherry tomato with 5 to 10 holes; place in a nonreactive bowl
- 4 cups cherry tomatoes
- 1 lb. beefsteak tomato
- 1 large red onion, quartered
- 1 T kosher salt
- 3 large lemons
- 1/2 cup white tequila
- 1/2 cup plain or citron- or pepper-flavored vodka
- 1/4 cup cider vinegar
- 1 T Worcestershire sauce
- 1 T freshly ground black pepper
- 2 tsp sugar
- 1 1/2 tsp Tabasco sauce, or to taste
- Margarita Dipping Salt, for serving
Barilla Tri-Color Penne Pasta Salad

1.) Bring large pot of water to a boil, season with salt
- 1 box Barilla Tri-Color Penne
- 6 T Olive Oil
- 1 clove garlic, minced
- 2 pints cherry tomatoes, halved (red and yellow)
- 1/4 cup chives, minced
- 2 4 oz. balls fresh mozzarella, cubed
- 2 cups lightly chopped baby arugula
- 2 T lemon juice
- 1/4 cup Parmesan cheese
- salt and pepper
New York Strip Steak with Beer and Molasses Steak Sauce

For the sauce: In a medium saucepan over medium heat, melt butter
- For Sauce:
- 1 Tbsp unsalted butter
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 2 cups ketchup
- 1/2 cup molasses
- 1/2 cup apple cider
- 1/4 cup sugar
- 3/4 cup lager-style beer
- 1 Tbsp yellow mustard
- 2 Tbsp lemon juice
- 1 Tbsp Worcestershire sauce
- 1 Tbsp cayenne pepper
- 1 Tbsp paprika
- For the Steak:
- 3 (1 lb. each, 1/2" thick) prime-aged New York Strip Steaks
- Salt and freshly ground black pepper
- 2 Tbsp vegetable oil
Steakhouse Salad

1.) Rub the steak with 1 tsp of oil, season on both sides with the steak rub
- 1 lb. sirloin steak (about 1 inch thick)
- 2 Tbsp plus 1 tsp olive oil
- 2 tsp Montreal steak rub (or other favorite rub)
- 2 Tbsp white-wine vinegar
- 1 tsp Dijon mustard
- 1 small clove garlic, minced
- 1/2 tsp sugar
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 (5-oz.) package mixed baby greens
- 1 pint cherry tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1/3 cup crumbled Danish blue cheese
