Chicken Under a Brick

Heat oven to 450. Season chicken on both sides with rosemary, salt and pepper
- 1 small (31/2 lb) butterflied chicken,split
- 2 T fresh rosemary, rough chop
- 1 tsp kosher salt
- 1/2 tsp fresh ground pepper
- 1 lemon, cut in wedges
- 3-4 T extra-virgin olive oil
Shrimp Scampi

In large skillet, melt the butter with the olive oil over medium low heat
- 4 T unsalted butter
- 2 T olive oil
- 3 large garlic cloves, minced
- 16 large shrimp, shelled and deveined
- Pinch of salt
- 2 T very finely chopped fresh flat leaf parsley, plus a few springs for garnish
- 1 T fresh lemon juice
Toffee

Melt butter in a saucepan; add sugar and fine cut nuts
- 1 lb butter
- 2 cups sugar
- 1/2 cup almonds, cut fine
- 1/2 cup almonds, chopped
- 8 oz. chocolate (semi-sweet or milk)
Grandma's Chocolate Brownie Waffles

In large mixer bowl, cream butter and sugar at medium until fluffy
- 1/4 c. shortening
- 2/3 c. sugar
- 2 squares baking chocolate, melted
- 3 egg yolks
- 1 1/2 c. flour
- 1 T. baking powder
- l/4 tsp. salt
- 1 1/4 c. milk
- 1/2 tsp. vanilla
- 1/2 c. chopped nuts (optional)
- 3 egg whiles, stiffly beaten
New England Yam Bake

Put pineapple and yams in baking dish
- 1 - 20 oz can pineapple chunks, juice reserved
- 2 - 17 oz cans yams or sweet potatoes, drained
- 1/4 cups flour
- 3 T brown sugar
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 3 T butter
- 1 cup marshmallows
Ice box Cookies

Color: Green, red, yellow, and white to make rolls
- 12 oz granulated sugar (1 ½ cups)
- 1 lb 4 oz shortening or butter
- 1/4 oz salt (I can’t remember what I used for this, maybe 1/4 or 1/2 tsp…..don’t remember)
- 1/4 cup or (2 oz) egg white
- 1 tsp soda
- 1 lb 14 oz pastry flour (sift)
Martha’s Pate Brisee

In the bowl of a food processor, combine flour, salt, and sugar
- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup (2 sticks) unsalted butter, chilled and cut into small pieces
- 1/4 to 1/2 cup ice water
Grandpa's Chocolate Icing

Mix margarine, glucose and cocoa very well
- 14 ounces margarine, room temperature (I used butter)
- 2 ounces of glucose (I used Wilton brand, found at Michael's Craft Store)
- 10 ounces of cocoa
- 1/2 pint boiling water
- 3 1/8 pound powdered sugar
- 1/2 tsp vanilla
Sausage and Apple Kebabs

Heat oven to 400°F and line a rimmed baking sheet with foil
- 18 ounces fully cooked chicken sausage links or kielbasa (you can find cooked sausage in packages in the meat section of the supermarket)
- 2 apples (preferably Fuji or Braeburn, which hold their shape in the oven)
- ¼ cup maple syrup
- 8 small wooden skewers, soaked for 15 minutes.
Macaroni Salad

Cook pasta according to directions
- 1.5 cups salad macaroni (ditalini pasta)
- 1 can tuna, drained (optional)
- 3 green onions, sliced
- 1 tomato, cut in bite sized pieces
- 1/2 head iceberg lettuce, choppped
- Mayonnaise
- Johnny Season salt
