Rainbow Salad

- Red (pepper)
- Orange (pepper)
- Yellow (frozen corn)

Pan-Seared Flat Iron Steak

Rub steak evenly with steak seasoning and salt
- 1 (1-lb.) flat iron steak
- 2 teaspoons Grill Mates Montreal steak seasoning
- 1/4 teaspoon kosher salt
- 1 tablespoon vegetable oil
Buttermilk Oven-Fried Chicken

Before you go to work: In large ziploc, combine buttermilk and garlic
- 4 cups or so buttermilk (the skinny container)
- 4 garlic cloves, halved
- 4-6 chicken drumsticks, skin on
- Cooking spray
- 1 1/2 cups plain Kelloggs Corn Flake Crumbs
- 1 teaspoon oregano
- 1 teaspoon cayenne if you think you can get away with it
- salt
- a few grinds of black pepper
Graham Crackers

1. Preheat oven to 350 degrees
- 1 cup whole-wheat flour
- 1 1/2 cups all-purpose flour
- 1/2 cup dark brown sugar, packed
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 cup butter, chilled and cubed
- 1/4 cup honey
- 1/4 cup water
Egg Dye, Natural

All of these recipes are enough to dye about 2 eggs at a time
- Bright Yellow Dye
- 1-2 tsp ground turmeric
- 2/3 cup boiling water
- 1 tsp white vinegar
- Place turmeric in glass measuring cup. Add boiling water and stir to combine. Stir in vinegar.
- Blue-Green Dye
- 3 T chopped red cabbage
- 2/3 cup boiling water
- 1 tsp white vinegar
- Place cabbage in glass measuring cup. Add boiling water and stir to combine. Stir in vinegar. Let sit overnight for maximum color saturation.
- Blue Dye
- 1/4 cup blueberries
- 2/3 cup boiling water
- 1 tsp white vinegar
- Place cabbage in glass measuring cup. Add boiling water and stir to combine. Stir in vinegar. Blend with an immersion blender.
- Peach or Light Orange Dye
- Skins of 2 yellow onions
- 2 cups water
- 1 tsp vinegar
- Simmer onion skins in water, covered, for 20 minutes. Stir in vinegar.
- Magenta Dye
- 4 T grated beets
- 2/3 cup boiling water
- 1 tsp white vinegar
- Place beets in glass measuring cup. Add boiling water and stir to combine. Stir in vinegar. Variation: use golden beets to achieve a saffron hue.
- Purple Dye
- 2 T grated beets
- 2 T chopped red cabbage
- 2/3 cup boiling water
- 1 tsp white vinegar
- Place beets and cabbage in glass measuring cup. Add boiling water and stir to combine. Stir in vinegar.
Skillet Chicken Risotto

Brown chicken in oil, remove from skillet
- 1 chicken, cut up
- 2 T oil
- 3/4 cup long grain rice
- 1/2 chopped onion
- 2 tsp salt
- 1 tsp poultry seasoning
- 3 cups fresh mushrooms
- 2 medium carrots, peeled and biased sliced
- 2 cups water
- paprika
Lebukuchen (Honey Cookie)

Grandpa's recipe from the bakery
- 1 cup honey
- 1 cup molasses
- 1 1/2 cups brown sugar
- 2 eggs
- 2 T lemon juice
- 2 T lemon rind
- 5 1/2 + cups flour, sifted
- 1 + tsp soda
- 2 tsp cinnamon
- 2 tsp cloves
- 2 tsp allspice
- 2 tsp nutmeg
- 2/3 cup citron, chopped
- 2/3 cup walnuts, chopped
Magic Bars

Mix cornflakes, sugar and melted margarine
- 1 1/2 cups crushed cornflakes or graham crackers
- 3 T sugar (omit if using graham crackers)
- 1/2 cup margarine, melted
- 1 cup chopped walnuts
- 1 cup chocolate chips
- 1 1/3 cup coconut
- 1 can sweetened condensed milk
Sugar Free Apple Pie

Combine ingredients and put in a pie shell
- 4-6 cups sliced apples (about 8 golden delicious apples)
- 1/2 cup apple juice
- 1 1/2 - 2 tsp tapioca
- 1 tsp cinnamon
Southwest Chicken Chili

Heat the oil in a large saucepan over medium-high heat
- 1 T olive oil
- 1.5 cups diced onion
- 1.5 cups diced tomatillos
- 4 cloves garlic, minced
- 2 cups diced fresh tomatoes
- 2 cups cooked shredded chicken
- 1 T ground cumin
- 1 tsp ground ancho chile pepper or mild chile pepper
- 3 cups chicken broth (I only used 2 cups cuz I wanted it thicker)
- 2 (15 oz) cans navy beans, undrained
- 1/4 cup chopped cilantro, plus additional for topping
- 1 T fresh lime juice (optional)
- Salt and black pepper
- Shredded Monterey Jack Cheese, for topping
- Sour cream, for topping
