JALAPENO CORNBREAD

KATHLEEN BURNHAM'S RECIPE
- FIRST MIX:
- 1 cup yellow cornmeal
- 1/2 cup flour
- 1/2 tsp (heaping) baking soda
- 1 tsp salt
- 1 tsp. sugar
- 1 cup cream style corn
- 1 med onion (chopped fine)
- jalapenos to taste (chopped fine)
- 1 1/2 cups cheddar cheese (grated)
- SECOND MIX:
- 1 cup milk
- 2 eggs
- 1/2 cup oil
BEEF PORCUPINES

One of Cathy's 1st recipes she made when first married to Mike
- 1 lb ground beef
- 1/2 c raw rice
- 1/4 c chopped onion
- 1 t salt
- 1/4 t pepper
- 2 T olive oil
- 1 15 oz can tomato sauce
- 1 c water
PAIN FREE CAESAR SALAD DRESSING

Combine dressing ingredients and whisk until well combined
- 3 cloves garlic, minced
- 3/4 c mayo
- 1 1/2 t anchovy paste
- 3 T Parmesan cheese
- 1/2 t worcestershire sauce
- 1/2 t dijon mustard
- 1 T fresh lemon juice
- Salt and pepper to taste
- Parmesan cheese for topping on salad
RED VELVET CAKE

Cream shortening and sugar
- FROSTING:
- 3/4 cup shortening
- 2 1/4 cups sugar
- 3 eggs
- 1 1/2 t salt
- 1 1/2 T cocoa
- 3 cups flour
- 1 1/2 cups buttermilk
- 1 1/2 t vanilla
- 2 1/4 oz red food coloring
- 1 1/2 t baking soda
- 1 1/2 t vinegar
- 2 cups milk
- 1/2 cup flour
- dash of salt
- 1 cup shortening
- 2 sticks margarine
- 2 cups sugar
- 2 t vanilla
BEEF STROGANOFF

Lean Beef Stroganoff
- 10 oz wide egg noodles
- 1 lb (3/4 inch thick) boneless beef top sirloin steak
- 1 T salad oil
- 1 lb mushrooms
- 1 medium onion
- 2 T all purpose flour
- 14 oz beef broth
- 2 T wocestershire sauce
- 1/2 t salt
- 1/2 t sugar
- 2 T chopped parsley
- 1/2 cup light sour cream
CORN PUDDING

Preheat oven to 350 degrees
- Olive oil, for brushing dish
- 2 cups corn kernels
- 1 small red bell pepper, finely chopped
- 1/2 small yellow onion, finely chopped
- 1/3 cup grated reduced-fat Swiss cheese
- 1/3 cup grated Parmesan
- 2 T flour
- 1 1/2 t dry mustard
- 1/2 t salt
- 2 egs
- 1 (12 oz) can evaporated milk
CATHY'S PIE DOUGH

In a food processor, combine flour, salt and sugar; pulse to combine
- 1 1/4 c all purpose flour
- 1/2 t salt
- 1/2 t sugar
- 1/4 c (1/2 stick) unsalted butter (very cold)*
- 1/4 c shortening (very cold)*
- 1/8 + c ice cold water
- 1 t vinegar
- 1 t almond extract
- *I cut butter/shortening in small cubes and place in freezer for approx 30 minutes before using
BAKED CORN DIP

Preheat oven to 350 degrees
- 2 cans corn (about 15 oz ea), drained
- 16 oz cream cheese
- 8 oz canned chopped green chiles
- 4 oz chopped pickled jalapenos
- 2 cups grated cheddar (divided use)
GERMAN BUNDT CAKE

AUNT RUTH'S RECIPE
- Cake:
- 1 Box Golden Cake Mix
- 1 Box instant vanilla pudding
- 4 eggs - add one at a time
- 3/4 c water
- 3/4 c oil
- 1 t. vanilla
- 1 t. butter
- Spice Mix:
- 3/4 c pecans
- 1/4 c sugar
- 2 T cinnamon
- Icing:
- 1 c powder sugar
- 1 1/2 T milk
- 1 t. vanilla
- 1 t. butter
HAMBURGER FRIED RICE

- 1 lb cooked hamburger (browned & drained of fat)
- 1/4 c salad oil
- 2 c cold cooked white rice
- 3 eggs, beaten
- 2 T soy sauce
- 1/8 t pepper
- 3 green onions with tops, sliced
