CREOLE BREAD PUDDING

Dessert From Brennan's of Houston
- BREAD PUDDING
- 3 cups packed brown sugar
- 2 t cinnamon
- 1/2 t nutmeg
- 5 egs, lightly beaten
- 4 c milk
- 1 c whippng cream
- 5 t vanilla
- 14 bread slices, 1-inch thick
- 1 c raisins
- 1 1/2 c pecan pieces
- RYE WHISKEY SAUCE
- 2 C Whipping Cream
- 9 T Sugar
- 1 1/2 t cornstarch
- 2 T cold water
- 2 egg yolks
- 1/4 c rye whiskey
TERIYAKI STEAK MARINADE

Marinade for any type steak
- 3 or 4 lbs of any type steak
- 1 cup undiluted beef consumme
- 1/2 cup red wine (burgundy)
- 1 clove minced garlic
- 1/3 cup soy sauce
- 3 T lime juice
- 1 1/2 t seasoned salt
- 1/4 cup chopped green onions with tops
- 2 T brown sugar
PAIN FREE CARROT AND CILANTRO SOUP

Heat oil and butter in dutch oven or soup pot over medium heat
- 2 T canola oil
- 3 T butter
- 1 large onion, chopped
- 3 stalks celery, sliced
- 2 medium potatoes, chopped
- 2 lbs carrots, cut into 1 1/2" chunks
- 6 c vegetable broth
- 3 t ground coriander
- 1/4 c chopped fresh cilantro
- salt and freshly ground black pepper to taste
EGGS BENEDICT

* Preheat oven to 350 degrees
- 1 lemon
- 2 T butter
- 2 T flour
- 1 c (low fat) milk, warmed
- Salt and pepper
- 4 oz (low sodium) ham
- 1 T distilled white vinegar
- 8 large eggs
- 4 whole wheat english muffins
- 9 oz baby spinach
MEATLOAF WITH OLIVES

- 2 lbs ground chuck
- 1 small onion chopped
- 1 cup bread crumbs
- 1 15 oz can tomato sauce
- 1 c chopped green olives with pimento
- sea salt, tony chachere's and pepper
PAIN FREE PAN-FRIED FISH

Poke a fork into various areas of each fish fillet to tenderize and make small holes for the marinade to seep into
- For the marinade:
- 2 lbs firm fish fillets (salmon or swordfish)
- 1 c soy sauce
- 1/2 c hot water
- 1/2 of vegetable bullion cube
- 4 T olive oil
- 2 t brown sugar
- 4 t minced garlic
- 1 t ginger
- olive oil for frying
SPIDER CUPCAKES

USE BATTER FOR VANILLA OR CHOCOLATE CUPCAKE MIX
- VANILLA CUPCAKE BATTER:
- 1 1/2 cups all purpose flour
- 1 t baking powder
- 1/2 t salt
- 8 T (1 stick) unsalted butter, room temperature
- 1 c sugar
- 3 large eggs
- 1 1/2 t pure vanilla extract
- 3/4 c milk
- CHOCOLATE CUPCAKE BATTER:
- 3/4 c unsweetened cocoa powder
- 1 1/2 c all purpose flour
- 1 1/2 c sugar
- 1 1/2 t baking soda
- 3/4 t baking powder
- 3/4 t salt
- 2 large eggs
- 3/4 c warm water
- 3/4 c buttermilk
- 3 T safflower oil
- 1 t pure vanilla extract
- MERINGUE BUTTERCREAM FOR CUPCAKES
- 2 1/2 c sugar
- 10 large egg whites
- 4 c (8 sticks) unsalted butter, cut into pieces
- 2 t pure vanilla extract
SEVEN LAYER DIP

Layer all ingredients above in large rectangular casserole dish in order listed above Use tostito chips to dip
- Large can refried beans
- Sour Cream
- Quacamole
- Cheddar Cheese, shredded
- Black olives, sliced
- Tomatoes, diced
- Green onion, chopped
PAIN FREE MOM'S BUTTERMILK PANCAKES

In large mixing bowl, combine dry ingredients
- 2 c unbleached flour
- 1 c whole wheat flour
- 3 T sugar
- 3 t baking powder
- 1 1/2 t baking soda
- 3/4 t salt
- 3 c buttermilk
- 1/2 c milk
- 3 eggs
- 1/3 c butter, melted
PAIN FREE GARLIC GREEN BEANS

Steam green beans in a large saucepot or dutch oven just until tender; drain and return to pan
- 2 1/2 lbs fresh green beans, trimmed, washed ad broken into 2" pieces.
- 8 cloves garlic, minced
- 1/2 c olive oil, plus more for drizzling
- garlic salt and pepper to taste
